If you live near or around Santa Barbara, Ca, they have two places on the harbor where you can indulge some fresh Uni off the pacific coast. You can still taste the fresh ocean salt water too. I have to say, it was more affordable than buying it from sushi places or at the store.

Here's a suggestion. Mix it with egg, as in Sea urchin omelette. Or for Ultimate torta, this is my recipe. Add mashed eggplant (steamed or roasted first) Onions Tomato. If you want to make it heavier add precooked diced potatoes. Then stir fry first for the flavors to mix, then introduce the egg-uni mixture. Cook to your liking. PS. Torta is a Filipino dish with egg as main ingredient, wherein you can mix other ingredients then fry them. It is commonly made with eggplant, corned beef, corned/canned tuna, potatoes, and even thinly sliced hotdogs.

I took a trip to Mexico with my family a couple years ago and my dad and I went out diving for urchins in the reef by the beach house we were at. The water was shallow enough that we could just swim down a few feet and grab them (using soccer goalie gloves) and we brought them back and ate them fresh after cracking them open. One of my favorite memories to this day.
