Can the peach skins be dehydrated then crushed to a powder? Would be great to mix in a smoothie, in ice cream, yogurt, milk, as a dusting on cakes, etc.
Sure. I usually infuse simple and make a syrup for brushing on cakes, a simple soak for desserts, or cocktails.
I just do not like the texture of the skin in my mouth! Wanna just eat one not boiled and bathed.

For some reason this video seems un-rehersed.. i.e. too little water in the ice bowl dropping peaches in hot water by dropping by hand instead of lowering with a spoon. It's kind of like an inexperienced cook
