Ingredients for making French hot chocolate:
100g dark chocolate
500ml whole milk
2 cinnamon sticks
1 teaspoon vanilla
1 tbsp cocoa powder
1 tsp sugar
1 pinch salt
Instructions for making Parisian hot chocolate:
- Start by thinly chopping 100g of dark chocolate
- You want it to be at least 70% for that deep chocolate flavor
- Once the pieces are roughly the same size, set the chocolate aside and pour 500 ml of whole milk into a sauce pan on your stove
- Add two cinnamon sticks and a little vanilla extract then turn the heat on the medium and begin whisking
- Cook, stirring frequently, until the milk starts to boil and he cinnamon has infused it’s flavor into the milk
- This will take roughly 10 minutes.
- Remove the cinnamon sticks, turn off the heat and add 1 tbsp of high quality cocoa powder
- Whisk to incorporate the powder into the milk, then remove from the stove top and strain the mixture through a sieve
- This will remove any lumps and excess foam to ensure your hot chocolate is super creamy and smooth
- Return the strained mixture to the stove with the heat still turned off
- Add about a tsp of sugar (or more if you want it sweeter) as well as a pinch of salt
- This is really important as it will enhance the flavor of the chocolate which you can add next
- Turn the heat back on and stir until the chocolate has completely melted
- If you like it thicker, keep cooking for a few more minutes until it reaches your desired consistency or simply remove from the heat and serve immediately

We did this without knowing it was called "French Hot Chocolate." Neat! Can confirm its delicious, cinnamon is a nicer touch
I actually pour the cocoa powder with cinnamon into a strainer then dust into the milk. It's slower and gives a better incorporation (zero clumping). Did this as it works with macadamia or high fat almond milk as a lactose free version.
I find using any bar above 65% dark chocolate makes the mix uncomfortably bitter.
Also, I would add the vanilla at the end when melting the chocolate so you lose less of the volatile vanilla compounds.
It worked!!! It’s awesome and we are using it for our school food fest
I tried this exactly the same way and used 100% dark chocolate around 50g. Added 2 tbsp sugar to it. Tasted really good.

Lived in france 25 years now never seen them make it like that here,and différent régions.i would say its more swiss than french .
a lot of european countries do their hot chocolate this way. not just the french. it's usually thicker and less sweet. they call it drinking chocolate.

I have also often made it with zero sugar. Yep. It’s good! It has a vague sense of sweetness that works for me. Sometimes I have added just a touch of honey. But at one time I loved it with no sweetener at all. Nice to know I’m not the only one!

As a french guy, I had multiple times the opportunity to drink hot chocolate from my grandparents, and parents. And we never add cinnamon or salt (!!?) or vanilla. Same in parisian restaurant/bistrot/coffee shop. I suppose the title "French hot chocolate" is some sort of clickbait !

Instead of wasting chocolate powder by adding to hot milk and later straining, simply add the choco-powder at the very beginning and keep stirring. This way you won't have any chocolate lumps.
