    We continued the celebration at UDUMBARA’s 30th anniversary with a dinner made by the talented IG @lounasleidi Kusal Salta. Thank you for making it unforgettable; her culinary skills are truly unmatched!
    I’m sharing my late Mom’s Cardamom Cake recipe by popular demand here! 💕 This is the cake I’ll also be baking for my Open Studio on Sunday. Come by for pottery and freshly baked cake!
    Bigi's Cardamom Cake
    Ingredients:
    • 1.4 dl flour (use 2 dl wheat flour and 2 dl graham flour)
    • 2 dl sugar
    • 2 tbsp baking powder
    • 2 tsp cardamom (I always use 4, just like Mom did!)
    • 2-2.5 dl cream/milk
    Almonds or nuts on top.
    Instructions:
    Mix the dry ingredients separately.
    Add the cream/milk and stir until smooth.
    Pour into a greased and breadcrumb-coated round cake tin with removable edges.
    Bake at 175-200°C for 30-45 minutes, until golden brown.
    Let the cake cool on a wire rack until it’s crispy on the outside but soft inside.
    Mom always doubled the cardamom in the original recipe, making all the difference. 💛
