Thanks for this. Note: Cake flour is made with lower gluten wheat where as bread and pizza flour are made from high gluten wheat, normally something like winter wheat or red wheat. The difference gives less chew to cakes.

Try this batter without the mochi! This is our regular batter so it’s good by itself too!
