Yo DJ BBQ! A general rule of thumb for citrus.. If it has very smooth almost thin feeling skin, the more juice it will yield, but the worse for zesting. If it has thick bumpy skin, better for zest, and less so for juice. Hope this helps da fans!

The right way (and originally) to be written is "piri-piri". "Peri peri" is just an english variation of the word spelled in some african countries. The first time the word was written was in portuguese, so it's the orginal way and most correct way to be written. Just an extra info.

The alcohol helps. And you are correct......I wouldn't hold the stuff more more than a couple months. If you haven't used it for 3 months then get rid of it.
Just made this wonderful sauce, but I sliced a whole, unwaxed lemon to get the aroma from the peel. Accidently took way too much salt (a tablespoon instead of a teaspoon). Let´s see if it will ruin the whole thing or not.
My understanding is that "piri-piri" is actually a term for the bird eye chilli and that true piri-piri uses only bird eyes. They just so happen to be my favourite type of chilli too ;)
The Portuguese use various alcohols. You can leave it out but it helps preserve the concoction. As does the vinegar. Did you not want to use alcohol? Just leave it out completely.

I usually leave mine alone for 2 weeks before using it. Some vinegars and peppers are more potent than others so feel free to use more if you aren't getting the results you are after.
how would Peri peri with habanero? I have about 50 habaneros. Im thinking about making some habanero pickles or raspberry habanero jam to use as a glaze on chicken.

sure, use less chillis or do the roasting thing. Or just chuck teaspoon of dried chilli flakes in the container for a hint of heat.

Made my couple of days ago, tried it today. Tastes like chili pepper infused oil. Vinegar and lemon doesn't come through at all.
