    Done a "my own" version with jalapeno instead of chilies, vodka instead of bourbon and lime juice instead of lemon juice + white wine vinegar BIG HIT ! ! ! Thanks for the inspiration DJ, Yeah!!!

    Excellent DJ, I will also take a full bottle of decent sherry and put dry bird eyes in it.

    Loved to see the reference to the sauce that's made here in my country.
    Here we used in alot of things, from snails to sea food, it's awesome :-)

      O meu fornecedor é o Luis Cunha, mas está visto que tenho de tentar isto um dia destes, mas usando o nosso medronho do Algarve. O rum é bom mas com medronho fica muitoooooo melhor :-)

    You should be called DJ Sea-salt... In my country Piri-Piri means Chilly flakes. My 'Piri-Piri' sauce is: Chilly flakes, vodka, olive oil, salt, pepper, lemon juice, tabasco and a little bit of chilly jam. Nice video dude, I'll subscribe

    Yo DJ BBQ! A general rule of thumb for citrus.. If it has very smooth almost thin feeling skin, the more juice it will yield, but the worse for zesting. If it has thick bumpy skin, better for zest, and less so for juice. Hope this helps da fans!

    hey man ! i just made this and im wondering if you used the actual measurements which you talked about in the video since i used a similar kind of jar as you did and when i finished mine was completely full (i used the exact measurements which you told).     this seems amazing. I can't find red chilies in here though. Only green ones. Would brown rum, cherry vinaigar and 1 scotch bonnet be a good mix? haven't done any alcool-pepper sauce yet. Your channel is amazing man. That black-ipa chicken is the reason why i want this sauce

      Saeed Mohammed Sunny Monroe Just leave it out. Most of the Piri Piri goodness is soluble in Oil.

    The right way (and originally) to be written is "piri-piri". "Peri peri" is just an english variation of the word spelled in some african countries. The first time the word was written was in portuguese, so it's the orginal way and most correct way to be written.
    Just an extra info.

      You are correct. My director/camerman put the recipe up as Peri Peri. I noticed his englishness and changed it promptly. apologies if we offended.

      Lol, mine did this too. I guess that it's not supposed to be stored in the fridge. I would think that the vinegar and whiskey will stop it from going foul.

    Any kind will do, but I like the Carribian style Piri Piri sauce , which calls for Bishops Crown chilli peppers.

      +Vlknaltin BXL cooking doesn't need recepies you can invent the things yourself if you wanna ad brown sugar you just do it is it good? you do it the next time again is it bad? you don't do it again its all up to you be as creative as you like mate

    Love your videos, but I was just curious about whether or not there's a chance of this becoming infested with botulism? I know that putting garlic in oil by itself can have some nasty effects, but I don't know if the acid and the alcohol would prevent this from happening in this case?

      The alcohol helps. And you are correct......I wouldn't hold the stuff more more than a couple months. If you haven't used it for 3 months then get rid of it.

    Just made this wonderful sauce, but I sliced a whole, unwaxed lemon to get the aroma from the peel. Accidently took way too much salt (a tablespoon instead of a teaspoon). Let´s see if it will ruin the whole thing or not.

    My understanding is that "piri-piri" is actually a term for the bird eye chilli and that true piri-piri uses only bird eyes. They just so happen to be my favourite type of chilli too ;)

      The Portuguese use various alcohols. You can leave it out but it helps preserve the concoction. As does the vinegar. Did you not want to use alcohol? Just leave it out completely.

    Hey DJ! i'm like super bad for super hot stuff, my mouth just can't handle it. what can be the minimum of chillis to go and would the sauce works if a roast them first to sweet it up a bit?

      sure, use less chillis or do the roasting thing. Or just chuck teaspoon of dried chilli flakes in the container for a hint of heat.

    Made my couple of days ago, tried it today. Tastes like chili pepper infused oil. Vinegar and lemon doesn't come through at all.

      I usually leave mine alone for 2 weeks before using it. Some vinegars and peppers are more potent than others so feel free to use more if you aren't getting the results you are after.

    how would Peri peri with habanero? I have about 50 habaneros. Im thinking about making some habanero pickles or raspberry habanero jam to use as a glaze on chicken.
