As an avid Masterchef watcher James is spot on about black chefs, I always try to root for them but nah. I’m also hyped for Lauren and Phillipe this season. She (Lauren) was so gassed on ig that James is rooting for her.

As an avid cooking competition watcher, home cook/baker, recipe tester, I’ve noticed that Black chefs (and other PoC chefs) lean on the flavors they grew up on (usually Caribbean or African). The problem is, “fine dining” and the training that a lot of chefs receive at the CIA or Le Cordon Blue (for example), is HEAVY on “classic” European cooking techniques. So much so that the food we grew up eating, a cooking style that we’ve mastered, isn’t considered good enough because it’s not French cooking techniques. Why is that the standard? Why is formal training that centers (white) European techniques the norm??

It’s not about testing how well you can cook your go-to cuisine. & it’s not just Black chefs who struggle in that show with that adaptability and skills issue. To be a MASTER chef, they want to know that you can cook many different cuisines, using a wide array of ingredients, using many cooking methods, etc.

As an avid Masterchef watcher James is spot on about black chefs, I always try to root for them but nah. I’m also hyped for Lauren and Phillipe this season. She (Lauren) was so gassed on ig that James is rooting for her.

As an avid cooking competition watcher, home cook/baker, recipe tester, I’ve noticed that Black chefs (and other PoC chefs) lean on the flavors they grew up on (usually Caribbean or African). The problem is, “fine dining” and the training that a lot of chefs receive at the CIA or Le Cordon Blue (for example), is HEAVY on “classic” European cooking techniques. So much so that the food we grew up eating, a cooking style that we’ve mastered, isn’t considered good enough because it’s not French cooking techniques. Why is that the standard? Why is formal training that centers (white) European techniques the norm??

It’s not about testing how well you can cook your go-to cuisine. & it’s not just Black chefs who struggle in that show with that adaptability and skills issue. To be a MASTER chef, they want to know that you can cook many different cuisines, using a wide array of ingredients, using many cooking methods, etc.
