  • Where we’re from, escarole can be a great vehicle, in soups, like Pasta Fah joool, and one of our favorite sides, which if done right, can be a super strong main dish too. This mighty concoction? Utica greens. Spicy, cheesy and a combination of meats that threaten to outshine any main dish you pair it with. Easy to make, and this is a family recipe our mom taught us when we first learned how to cook. It was the first time we had someone ask for a recipe, and every single time we’ve made it, someone has asked about it. We put ‘em on sammies, in omelettes, even to stuff mushrooms, they are the ultimate leftover food, and this is THE way to make them, baby. We use bacon grease as the heart of this beauty, and it is something to behold. Perfect for Sunday football, or an Italian dinner with the family, we’ve used it for tailgates and parties, and it keeps people coming back for more. Let’s turn the world green, ya’ll. Manga.

    Taking a bite: 3:48
    Ingredients -
    -3-4 heads of fresh escarole, washed, cleaned and chopped
    -½ pound chopped bacon
    -½ pound chopped prosciutto
    -½ lb of ground, Gianelli Italian sausage, we use sweet, but you can use mild or hot
    -⅓ a large yellow onion, diced
    -4-6 hot cherry peppers, diced (depending on how hot you want it)
    -5 crushed garlic cloves
    -6 oz of great, grated Romano cheese
    -4 oz of grated parmesan cheese
    -1 cup of Italian-seasoned bread crumbs
    -1 cup of chicken stock
    -Good olive oil
    Directions -
    -In a large pan, brown that sausage and set aside
    -In a large pan, place enough olive oil to cover the bottom of the pan, and add in the chopped bacon
    -Cook the bacon until it is half crispy, then add in the garlic and onions, and cook until soft
    -Add in the prosciutto
    -Add in the diced peppers
    -Add the escarole in, a handful at a time, until it cooks down and wilts up
    -Add chicken stock
    -When the chicken stock is hot, add two handfuls of breadcrumbs, all the cheese, and the sausage
    -Mix together and serve hot, baby!
    Bonus Tip - We mentioned omelets, stuffed mushrooms and on a sandwich, right? They’re great on steak or breaded chicken, and one of our favorite dishes we’ve ever had was at Pastabilities - a fried green tomato topped with Utica greens, on their famous stretch bread. Wow.

    Interesting twist on the recipe I have used for years but I am going to give it try / enjoyed the simple and fast explanations. I also will only cook a turkey or chicken Spatchcocked - so I love the "Spatccock Funk" name. Good Job!

    Live In Vegas and I miss these dishes. From da Nort side to Vegas ya just don't get Good Utica Greens.

    I make them exactly the same way, but I like to drop a little honey in at the end, especially if I am serving dish to a wide audience. It helps to tone down peppers and adds a unique sweetness. Also this can be a great vegetarian dish at events, remove the sausage and bacon, add some mushrooms, and there you go!!!

      Add cannellini beans and potato wedges instead of all that meat( I add just a little prosciutto but you can leave it out for a meatless dish). Add a little of the cherry pepper juice to give dish tang. Nix the honey for me. 😊

    This is not how utica greens are made we don't use sausage or bacon.
