RECIPE
▼ Ingredients
22cm pound cake mold / 18cm pound cake mold + 2 small cups
Mascarpone 200g
Cream cheese 50g
Condensed milk 20ml
Unsalted butter 10g
Whipping Cream 200ml
Roasted Green tea 2g
White chocolate 20g
Egg yolk 2
Table sugar 30g
Egg white 2
Sugar 20g
Instant coffee powder 15g
Hot water 90ml
Sugar 10g
Marie biscuit
Cocoa powder
▼Step
1. Soften the mascarpone and cream cheese, mix well, then add condensed milk and mix well
2. Heat the butter in the pot. Add 50ml cream and roasted green tea to a boil, turn off the heat and add the white chocolate.
3. After soak for 10 minutes, sieve the tea leaves. After the 150ml light cream is beaten, add the roasted green tea paste.
4. Add sucrose to the egg yolks and beat on top of hot water until thick and fluffy. Beat the egg whites with sugar until stiff peak.
5. Mix the mascarpone cheese paste and egg yolk paste first, then add the light cream paste and mix well, and finally add the egg whites.
6. Place a layer of biscuits dipped in coffee liquid on the bottom of the mold, pour the cheese paste, and then spread the biscuits dipped in coffee liquid, then pour the cheese paste, and finally sprinkle cocoa powder on the top.

mascarpone 不要放室溫,雪櫃拿出來直接拌入(它本來就很軟了,不用放軟),而且只能用手拌,不能用電動,就不會分離不會起粒。

想問焙茶如用焙茶粉代替份量一樣是2G嗎?另外是否不需要加熱?
@@lampaho 雖然我唔係post主,但試下答你。:P 比我做既話,焙茶粉可以照用2g , 太少太難量重的話,就用3/4 tsp (因為 1tsp 大概 3g). 但因為焙茶粉會吸水,可能要增加大概1湯匙忌廉,總之要達到影片中煲入面焙茶+牛油+忌廉+白巧克力 mixture 既濃稠度。另外我認為需要加熱,因為熱力會更有效散發茶香 。反正本來煮burnt butter 同溶化白巧克力都需要熱力。希望幫到你。

Thinking is it possible to use earl grey tea bag to replace Hojicha tea in this recipe 🤔 Since hojicha has a more strong flavour than earl grey, I’m thinking earl grey may bring some light & floral flavours to express more prominent of the flavour of coffee. 是的,而且需要最慢速垫冰打发,我上周刚做一个也是油水分离翻车了,后面重新做了才好。另外如果打发时候发现有点太稀可以再加点奶油,总之一定要慢

Traditionally it is marsala not grand Marnier. And come on now, at least use a cake for layer not crackers!

蛋黄是有煮过(double boiler 煮至浅黄色),你要是怕也把蛋白用Swiss method (double boiler)煮到50-55°c

@@user-ol3ss3wi8f mascarpone is the base for tiramisu, but many other ingredients used in this recipe are not, so for sure a great dessert but not really a tiramisu..

It is made of ladyfingers (savoiardi) dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa.” according to Wikipedia. Other than the biscuits, I don't see why this is not a tiramisu. Oh well maybe you can say it's a variation of tiramisu
