If you wanna do story mode, online or any other mode, you can just restart the game and everything will be set to default again until you again press M and select stage using the FIGHT HERE button.
I am really sorry. It is not possible. Also Playstation is not powerful enough to run split screen which is the reason the devs didnt give split screen all stages in the first place.
