I just found you on social last night and now follow on all the platforms! I had an appointment near Trader Joe's this afternoon so I got what I needed while I was out and will make this tomorrow night! I also love having cooked sweet potatoes on hand so I got a few extra.
Starting a new journey and trying to implement more plant based foods into my diet. Sweet potatoes have never been my thing- not a fan of the sweet, but learning little by little to try. I am hoping this will be a good one for me😊I am excited to try. I would definitely love to see more budget friendly, soy free, delicious recipes. Transitioning is scarey and a little confusing. I have been listening to your pods casts and finding them to be informative, uplifting and motivational.
This looks really tasty! I think I would have to double the filling for my family of 5 because we are in a moment where all three of my boys are teenagers (13, 17, and 19) and the amount that they eat is mindblowing! I've never fried up tacos with the filling already inside and it looks so so good. Must try!
Teenage boys are little vacuum cleaners when it comes to food sometimes. Ha! If you steamed extra potatoes, added an extra can or two of beans, you can make quite a lot of these tacos. Enjoy!
