From a barista: Pour overs will give you a very clear, sharper taste in coffee. I personally think it is great for bringing out sharper, acidic notes in coffee like fruity coffees. French press is good for a more hearty, slightly earthy flavor. I think it's because the coffee sits in the water so you have more of the coffee bits/solutes in the actual coffee liquid but that's my suspicion haha. So it sounds like you found the brewing method that matches your palate!

It's sooo beautiful! ~ My father taught me how to play a few songs but only from memory. I never learned to actually read sheet music. ~ He was quite talented and in addition to the piano he could also play the trumpet, accordion and even the banjo. He passed when I was 17 y/o. Piano will always take me back to listening to him play so I agree completely about the wonderful memories surrounded by music. Autumn is definitely one of my favorite seasons in terms of decor. Fun colors to play with and wonderful scents. A season to get cozy near a warm for and also to go outside and play in the crisp air. Great choices and great colors you've chosen. Nothing beats a nice warm apple cider.

As a barista I might have some insight into the issues you had with the french press. Different brew methods require different granular sizes. French press requires a larger grain (because the holes in the filter are quite large and you let the coffee steep for a while, so if the particles are too small, you end up with a 'muddy' coffee), you're looking for the texture of coarse sea salt. For pour over, the texture of white sugar is good. If you would be interested, you can ground beans yourself, or get them ground at a (speciality) coffee shop. If you're looking for the most sustainable way of consuming coffee (you do not have to, I just know you have a very sustainable lifestyle already), you could look for the label 'Direct Trade', it means that the coffee farmers are invested in properly, and no money goes to middle-men. You don't have to take any of this into account haha, but I thought I'd share the little bit of knowledge that I have. Have a great day :)
