I made this cake twice. First time made quite a few accidental mistakes. (Like accidentally used buttermilk instead of whole milk in filling and forgot to add pineapple to frosting before spreading it on cake.). The cake was still delicious and got lots of compliments. Then I decided it was so good in spite of mistakes that I should try it again. Second cake only slightly different from first in taste. (Maybe it should be called foolproof pineapple cake😅). Aesthetically, however, I found the frosting with pineapple in it very difficult to work with. Never did get anywhere near smooth. I attribute this to the pineapple, which did add to the overall flavor. Any special tips on working with this frosting?

Can u make the filling ahead of time?.... what happens if you mix in the butter let it cool to room temp and then put in fridge? Or do you let at on counter if using the next day?
Heya! :) I put them both on the middle rack of the oven. If your oven isn't large enough then you can use two racks just make sure the top rack isn't too close to the top of the oven :)
