Great idea using the sausage mince. I'm not a basil pesto fan, I prefer the sundried tomato pesto. So your idea here would definitely come in handy. Cheers PMGK 👍🤤😀

I actually use a different Pesto for this recipe, than the one I previously filmed; Half the nuts, twice the Olive oil and Parmesan. I like it better. Piccata, huh... I guess somebody likes Capers.... ;-)
I don't know about "ANY", per say, but the white cheeses like, Asiago, Gouda, Monteray Jack, Parmesan, Romano or Mozzarella would be pretty good. You really don't need it for this recipe though. 😋 🥂

Hmm. Not sure how breakfast sausage would taste in pasta, but it's worth a shot.
...Italian sausage is great too. Breakfast is just a little more mild and adds a nice sweetness.
