Great review! I like videos that throw in a few drone shots and switch things up (follow, hover, zoom out, pan). I prefer mostly shots where I can imagine riding the trail (pov, follow, hover) and I don’t like the reverse angle, makes me dizzy. (But if you’re reviewing a set of bars reverse/side shots would be awesome to show the different grip angles in action) Can you get it to lock onto the fork or where a tire meets the ground (probably not) … it would be cool to see a part being reviewed in close up action.
I haven't tested it on a ski run, but when I've started it following one of my kids it doesn't seem to get confused with the other ones running around.

I think it's definitely worth it, especially if you're usually riding by yourself or want to get some wider shots of the terrain and things like that.
Have you tried the new dolly zoom feature? it's pretty nice.
If you're on a busy ski run, where there are other people around, is there a risk of it getting confused and following the wrong person?
