What bank is best to open in Thailand for this purpose

I like your videos, they are clear, to the point and make sense. That's probably because of your Canadian background... :)
If I open a Thai account and use the card to pay (no cash from the ATM), would it still make sense to open a Wise account?

Yes the Wise account will allow you to transfer your money from your home bank account into your Thai account at really good exchange rate + less fees. Glad you like my videos! Thanks!

Can I use the Wise card to purchase food and goods like a debit card in Thailand without a Thai bank account. If so, would the charge each time be the transfer fee you incurred to transfer Thai Baht from Wise to your Thai bank account. Does it make sense to open a Thai bank account for just a 15 day visit?

Yes it's possible to use the Wise card like a debit card in Thailand without opening a Thai bank account. Opening one up is for those who need access to physical Thai cash.
But if you plan on just using for purchases like a debit card on your 15 day trip here, using your wise card would be the great choice. The only fee you'd incur is the conversion fee from your home currency to Thai baht on the wise app. The fee is minimal.
