This was without a doubt one of the coolest experiences of my 8 weeks backpacking in SouthEast Asia. About a 45 minute ride from Chiang Mai is the Bua Thong Waterfalls, which have a unique property that allows you to climb them. Absolutely unreal! Definitely check it out if you are in the area.
