Greetings from West Coast Canada. This looks delicious. My comfort food is fried SPAM with a fried egg (or two or three) on whipped potatoes. And steamed Brussel sprouts if you have them.

Sounds delicious! I personally never tried spam or eggs with whipped potatoes combo before, but hash brown (shredded potatoes and/or diced potatoes) is great with eggs, we have hash browns and fried/scrambled eggs combo regularly!
