I wasn't sure until seeing this on my deftones live binge, but I'm almost sure of it now- he can scream while breathing IN to get those REALLY high wails. You can also hear his vocal chords slowly dying- after the 2000 tour, he had to go into therapy for his throat, he almost lost his voice! I remember seeing them live and thought, at the time, that he was kinda crappy live, but NOW I know why. I think this is why they started to become more ambient over time, but over time, he healed and HEY, what doesn't kill you (or your vocal chords) makes you stronger!
