    Sauerkraut and Smoked Sausage with Potatoes & Apples
    Sauerkraut had never been one of my favorite dishes growing up. But as I have gotten older, I have come to like and appreciate the benefits of it. Especially when making my own and having all those probiotics to help with gut health. I put this dish together for New Years day and it turned out very good. I know it won't be an only New Years day dish. This one will go into my menu of dishes to make quite often. Let me know what y'all think of my version. Have a great day.

    Ingredients:
    1 package of smoked sausage
    Olive oil
    1 tablespoon butter
    1 onion cut in 1/2 inch moons
    2 apples sliced about 1 inch thick
    2-3 red potatoes (can use russet if you want)
    1 quart Sauerkraut
    1 cup apple juice
    1/4 cup brown sugar
    salt/pepper to taste
    Put the olive oil in medium high heated pan.
    Slice sausage in 1/2 - 1 inch thick pieces and place in oil to brown.
    Remove from pan and set aside.
    Add the onions to the pan and brown 2-3 minutes
    Now add the apples and potatoes and cook for a couple minutes
    Add the sour kraut apple juice and brown sugar. Cover and let simmer for 20 minutes covered.
    Uncover and nestle the sausages into the kraut.
    Cook uncovered an additional 20 minutes or until the liquid is absorbed and the potatoes are tender.
    Salt and pepper to taste.

    I so miss having a pork roast and sauerkraut (with a bit of brown sugar). My kids swear they had to eat it every night for a week. There was never enough leftovers for that to happen! They won’t touch it now. I recently bought sauerkraut and plan on making it with sausage - just for me for lunch.

    Wife and I have been craving sauerkraut on brats, this looks so good!!! Think we'll make a batch with little extra kraut for the brats, I'm sure your recipe will make them great and I can't wait to try them potatoes!!

    Thank you so much for replying right back to me she is so sweet I love watching her and y'all seem so close I'm so happy to know that I'm in my 70s myself and if I didn't see my children at least four times a year I don't know what I would do they all live a good ways from me but I just wanted to know y'all seem so close I'm happy to know that this dish is wonderful my husband is going to love it I've never seen it cook like that.

    This looks so good, of course for a busy housewife thing come. I got everything in there but not in your order. Had to boil the potatoes & then add them. It smells good.

    This looks delicious! I’ve never had it with apples, apple juice and brown sugar but I will give it a try. I love your mom’s videos and I’m glad she is making more of them. I felt the same way about Kim Chi. My friend’s mom made it and it looked and smelled just awful. I have since acquired a taste for good Kim Chi.

    Using the apple juice and apple wedges sounds like a delicious way to add an interesting flavor and texture to a Sauerkraut recipe. A great way to Sweeten the Pot a little bit 😉! Thanks for sharing.

    I love sauerkraut and sausage since a kid, but I absolutely would have to cut those spots out of the potatoes! Might cook soon! Good for colon too!

    I don't like the apples in the sugar in the sauerkraut but other than that I do it about the same when I'm doing sausage and kraut. I prefer if I have it and can get it a good pork roast. But you never know much might show up at our house. Thank you for doing your Northern Roots too! I never really had any Southern Roots that I knew about but some cornbread would appear occasionally with this meal also. That may have been the West Virginia that was in the mix. Bless you Greg and Mama and all the rest of the family. Looking forward to seeing you homesteading in mid Tennessee. Think you will do well. Yeah I'm on the Browning of your sausage I like that dark brown especially if I'm going to mix it in kraut or scalloped potatoes adds loads of flavor.

    Like your recipe, I never tried it with apples and apple juice. I will make it like that sometime. Looks good! I learned this trick from my Mom, I RINSE the sauerkraut in a large fine seive before I add it with the kolbassi or smoked sausage.....Yum! Rinsing the Sauerkraut gets rid of some of the tartness and sourness...I'm from Pennsylvania Dutch ( Amish ) country. Sauerkraut, potatoes, onions, and smoked sausages ( Kolbassi ) are popular here. I am sure they cook with apples and apple juice with their Kraut....😊👍 Yum!

    Looks scrumptious! I have also done this with pork chops, pork roast, different sausages have even used mashed potatoes instead of chopping them. Love it, especially with the apples. Thanks for sharing. Happy New Year!

    Only store bought Kraut we buy now is Aldi's Bavarian style, it doesn't have that super strong tartness that other brands have. Their red cabbage and apples is good too. Apparently this dish is actually a German NYE dinner, or with a pork roast. I didn't know till a few weeks ago. I like putting a little German mustard in ours. So yummy.

    Hi, Greg 💕. Love this so much 🥰. No, I never did put apples in mine, but I have known people who did. I will try this next time 🥰. Sounds like Pennsylvania Dutch or German with the sauerkraut.     You should cook sauerkraut and potatoes separatly. Potatoes don't get really tender when you cook them together because of the acid in the sauerkraut.

      Yes I do! I bought it on Evine when Paula Deen was on there, it was her line. I am not sure if it is still available or not, maybe on Ebay?

      It's from Paula Deen's line on ShopHQ. Not sure if it's still available, I bought 2 and love them.

    Are you going to be close to your mother when you move to Tennessee? Only reason I was wondering I could not believe you had waited 7 years to see your mama and I hope you'll be closer to her that shocked me at Christmas.

      Yes I will be. When she said seven years that’s how many years it has been since I went to Ohio. She has been down here to South Florida many times in the last few years
