    Ugh i absolutely loved watching this show... hes such an amazing host and chef as well... miss this guy... they don't make laid back, comforting/watm, agd endearing cooking shows like this anymore, it's a shame really...i could fall asleep to this show it's so relaxing to watch in a great way

    Before there was the food network there was PBS. It's where I first saw all these great food artists...and Bob Ross. Thanks PBS!

    Chef Yan Kan.....still remember the days in the 1970s when you were in Calgary. I love your videos because your cooking is great, and the variety of you food is wonderful; and more importantly, done in the north American kitchen when deep frying with the hot flame can burn down the house. Keep up the good work with sharing Chinese cooking with all of us ....and happy traveling...Martin Yan's Chinatowns are da best !!!

    I love his shows started watching every episode at 19 now 46 got alot of ideas what to cook like just few days ago now grandmother already last few days feels like watching his cooking program again so download alot.

    The original iron chef, Martin, Emeril Lagasse I would watch all the time. Time just flew, thanks for RUclips I can watch them again.

    Classic show, from back when the Food Network was worth watching - it had shows that actually showed you how to cook real food... no longer

    I received "the Foods of the World" as a gift from my dad and this volume was from China and it had totally authentic dishes and Peking Duck was one of them and I must have watched 100 versions of this and almost all have totally different ideas of making this from putting marmalade in it to not inflating the skin which separates this iconic dish from a BBQ version of duck I have made about 10 and it takes some doing to convince Canadians that hanging the ducks for 2 days is not dangerous to our health and I have read that the original recipe from the first dishes was 50 K words but NOTHING can beat it's flavor

    i moved from northern NJ to Florida..... i used to hit Mott street 5 times a month for peking duck. I miss it so much!

    I'd watch the restaurant part every time I'm getting hungry. Peking duck is just delicious as heck and I really like that they use the remaining carcass for repurposing for another duck dishes.

    For those all the meat lovers out there that haven't had Peking Duck before, you're missing out! One of my all time favorite dish as Martin said the best part is the skin.

      In mainland china they just serve the skin and save the meat for lesser dishes.

    I love how some ppl would say "eww. Keep the carcass. Cook it? That's gross. I would never." Oh, but you have. Not you, but your lineage. That is how we all have survived in the past. How do you think we all came out through the other end of winters, famine, disease, drought, and so on? THis is how we all live. ALL LIVE! Not just some ppl.

      Yes he can when he was out here in Arizona at the Chinese culture center for Chinese New year one time he did show off his talents on that when he was asked from many fans I was pleased to see he said it and showed he was real and never lied about it.. he is a wonderful and talented man of his skills...

    Have you got any more episodes of Martin yans Chinatowns? You have a couple that I haven't got yet. I've been looking for these for years. I have about 60 all up now only missing about 5-10.

    The chefs eating that duck meal next to him are probably sick of eating duck, because that's the main focus there, and they're tired of dealing with duck.

    Real eye-opener!
    I haven’t known the “Peking Duck” can be made a soup before. I love the duck soup, but I don’t like plenty of fat swam on the surface of soup.Maybe some haws is required for my duck soup:-D

      Well here's the secret... almost all the Americanized Chinese restaurants actually have and serve authentic Chinese food if you order off their secret menu... every. Single. Chinese. Restaurant. Has a secret Chinese menu that has all their authentic recipes on it...u just have to ask but sometimes its only reserved for friends and family

      Huggie, I totally agree! Every Chinese restaurant these days has been Americanized to the point that it's rarely even close to authentic. Such a shame.
