I love that sauce and now I know how it's done .. but, if you know how to make the red chimichurri sauce that is picante, please make a video on how to make that one ... so I can learn to make it also .. thanks again and have an awesome weekend!

You know, if you let it sit for a few days all the flavor gets infused into the oil and the vinegar and you have a much more intense flavor, if it’s good when you eat it fresh, when you let it sit for a few days the flavor goes off the charts, like 100 times better!
I find that chimichurri is best to make it fresh and have it within the first 3 days. It's not sofrito which holds pretty well in the fridge or even freezer

It changes the color and I personally prefer it when it mixed by hand. When you add the oil into the blender it emulsifys into the sauce. I prefer for there to be a little separation. I hope this helps!

I've never tasted chimichurri sauce but I'm curious. Okay, I can't stand the taste of olive oil and it makes my tongue itch. Can I substitute another oil?
Oh no! Sounds like you may have an Olive Oil Allergy :( you can definitely substitute the oil for whatever you like. I’d recommend going with an oil that’s light yet aromatic like a sunflower oil or even an avocado oil. A nice light canola oil will also do the trick. The main flavor in this sauce are the herbs and lemons and spices
