- Special Chinese Fried Rice is fast and easy to make. It's a tasty and delicious dish because you can add your favorite toppings, such as shrimp, scallops, Chinese sausage and bbq pork.

SPECIAL CHINESE FRIED RICE
A great way to cook day old rice. Put the rice in the fridge to dry the rice and to make to make the rice more chewy.
Special Chinese Fried Rice
4 to 5 cups cooked rice
1 egg
2 tablespoons sliced onions
1 tablespoon chopped ginger
1 tablespoon chopped garlic
2 tablespoons dice bbq pork
2 tablespoons sliced Chinese sausage
2 tablespoons shrimp
2 tablespoons scallops
1/2 teaspoon sesame oil
1/2 teaspoon dark soy sauce
1/2 teaspoon light soy sauce
1/2 teaspoon salt
2 tablespoons chopped green onions
3 tablespoons cooking oil
Preheat a wok or frying pan at medium heat. Add 1 tablespoon cooking oil. Crack the egg into a bowl and beat with a fork. Pour egg onto pan and cook for 30 seconds. Flip egg and cook for 30 seconds on other side. Remove egg from pan.
Put another tablespoon of oil into pan. Add onions, ginger and garlic and stir fry for 15 seconds. Add bbq pork, Chinese sausage, shrimp and scallops into pan. Add other toppings if you like. Stir fry fry for 15 seconds. Add rice and continue to stir fry for 2 to 3 minutes. Add 1/4 cup of water if you want softer rice. Add sesame oil, dark soy sauce, light soy sauce and stir fry for 1 minute. Cut egg into small pieces and put in pan. Add green onions. Stir fry for 30 seconds. Serve Special Fried Rice on a plate or in a dish. Enjoy!

Nice video, I liked it. So many people are confused on cooking fried rice. Good technique for home cooking. Remember peeps, cold oil in a hot wok helps make it non-stick. High temps are your friend.

I love China fried rice it is one of my favorite type of rice and I love serving it with Chow Mein topped with chili sauce. I need to get a wok to make the perfect fried rice. I still have soy sauce and should start using it next time my family serves white rice.

Yes, bacon is fantastic for fried rice. Sometimes I use what they call "Chinese Bacon". It's the same pork belly used in western bacon. Sometimes there is not enough oil in the wok. Preheat the wok before adding oil.
Also rice will stick if it's soggy. I cook my rice 1 to 1 ratio of rice to water. Check out my video on cooking perfect rice.
Using overnight rice will also help dry the rice. Put the rice in the fridge overnight.
Sometimes the quality of the wok will affect stickiness. My wok sticks sometimes but my carbon steel fry pan hardly ever sticks.

Does the grain of rice make a difference? I use short grained rice for cooking. Would that be okay for fried rice?

The real answer is no by the way, long grain rice is for fried rice.
Short grain is better for rice puddings as it forms gels more easily/becomes sticky (higher amylopectin compared to amylose starch). Long grain holds its shape better and doesn't become sticky to the same extent (higher amylose to amylopectin ratio).
Use long grain for fried rice. American long grain rice tends to be especially good.

So I get that day old rice will be drier. But can you somehow use just cooked rice?
Yes, you can use just cooked rice for the fried rice. Just let the rice cool off a little while before stir frying. On the other hand, I have made fried rice that came right out of the instant cooker while still hot. So it might just be a personal p;reference how you like your fried rice. What's the best wok? I cooked Beef Broccorri the other night in my cast iron pan and it was good. Would carbon steel be better so you can toss it easier?
The traditional cast iron pan has a rough surface and heavier. The newer cast iron wok has a smoother finish and is thinner, so it is lighter in weight, if you want to toss it. Since I use a spatula and ladle, I don't toss the wok. From my biased point of view, tossing the wok is not really an advantage to better tasting food. Good instructional video on how to make not greasy fried rice. If I can make a suggestion, you forgot to add 1 TBSP of sugar to the meat/seafood/veggie mix while stir frying before adding rice. Sugar is the secret ingredient to fried rice as it caramelizes on the meat and veggies and adds flavor.

If you have some chicken, you can make some orange sweet and sour fried rice. The relish can work like vinegar and add equal amount of sugar to balance the sweet and sour. Did you put soaked rice or boiled rice? also can I cook in normal non stick pan dose it make any difference in taste.
It's best to use overnight boiled rice. A non stick wok is great for cooking fried rice. The advantage of a carbon steel wok is that you get a bit of the smoky flavour from the wok. Thanks for viewing my video on Special Chinese Fried Rice.

im only starting at this and im irish and have no idea would going to a chinese store for the sauces be a good idea?
If you plan to do Chinese cooking white often, I would suggest buying some of the basic sauces and ingredients. I would include light soy sauce which can be a substitute for salt but with a little more complex flavor. I would buy some dark soy sauce, which is sweeter and is used for darkening food, such as fried rice and dishes like soy sauce chicken. If you like spicy in your food, buy some chili sauce or chili flakes. I like Chinese oyster sauce but a lot of people don't use it. Sesame oil adds a nutty flavor, especially when you add a few drops to clear broth but it's also optional. I try to introduce different sauces and ingredients for different dishes but you can still make most of these dishes if you are missing ingredients. So you cook everything on medium heat but only turn it up high when adding the rice with everything else, to achieve Wok Hei?
This is one of my earlier videos. I like to turn my heat on high right from start to finish. The maximum wok hei is achieved by cooking at high heat.
As a beginner, it's better to start at a lower heat setting and turn the heat on high as you go. Cooking at lower heat is also o.k. and some prefer cooking this way. Thanks for viewing my video on special Chinese Fried Rice.

Wow this is really good....I keep making egg fried rice but it never has that restaurant flavour? Do I make it the same as you just did but without all the trimmings. Have you got any tips to make takeaway egg fried rice. Thanks
To get the restaurant flavor, you need a carbon steel wok and cooking on high heat. Some of my later videos, I show how to cook on high heat. If you check in the description below, click on the link to"Chinese Cooking Accesory Guide, you will find some woks that I recommend, including the wok that I use. Even if you don't buy a carbon steel wok, and use a regular frying pan, turn the heat on high when you cook.
When you cook egg fried rice, you can add an extra egg. Cook it the way I do in the video. Cook the egg about half way and put back in after you finish cooking the rice. When you take off the eggs, add more cooking oil into the pan. I like using peanut oil nowadays. Add sliced or diced onions and stir fry for a minute or more before adding the rice in. Of course, use day old rice. Like I say, check out some of my later videos on fried rice on my other channel, called "Chinese Cooking Channel". If you have anymore questions, feel free to ask.
I think I might have bought the wrong wok 😵. I got a round bottom wok, I tried making this recipe and the egg got stuck to the wok . It came out pretty good though. Do you recommend a wok ring??
Yes, a wok ring would help because you don't want to hold the wok all the time. I have used a wok ring with a round bottom wok on an electric stove. The heat is not quite as intense because the wok is sitting higher and not in direct contact with the heat source but it still works o.k. Hello...I see you are cooking in a traditional wok...what is your opinion on the smaller non-stick woks that are out there? Like the ones from T-Fal?
I think the non stick woks are o.k. if you don't turn the heat up too high. Before I used to stir fry in a non stick pan on high heat, and I go through quite a few of those pans very shortly. The advantage of a good carbon steel wok is that it should last a lifetime. Also the added flavour of the carbon sear from the wok. I also have a small 10 inch carbon steel wok, which is easier to use. All in all, a nonstick wok like the the T-Fal still works pretty good if you don't want that searing "wok hei" effect. @@ChineseCookingChannel thank you so much for your feedback! The reason I'm asking is because I have a wok...I think it is like yours...and whenever I cook in it, the food gets stuck to the bottom. Is it because I have the heat too high?
It takes awhile to get a really good non stick surface. Also I put more oil than usual just to help it from being sticky. If you check some of video on maintaining a used wok, it will show some ways to help get the wok to being non-stick. Let me know how it goes and feel feel to ask me anymore questions.

Yes, good idea to put the rice in the fridge before cooking. I forgot to mention that. Usually, we put the rice that is left over everyday. What brand of wok are you using?

What type of rice did you use in this video? I use thai jasmine rice but it’s not as dry as yours even though i use 1:1 (rice to water) ratio
I use the long grain rice in this video. You might have to adjst the rice to water ratio slightly. Also, different kinds of rice will have different texture and softness. Thanks for viewing my video on Special Chinese Fried Rice.
Don't forget to leave the cooked rice in the fridge for a couple of days... Jasmine works fine but traditionally they use long grain. (I just finished eating my Jasmine fried rice). The next trick is to get a couple of sanitary gloves and massage oil into the cold rice coating it evenly and braking up all the cold hard lumps... when you have finished this process the rice is ready to add... The way I cook the dish is to first fry some finely chopped bacon in a wok then spread it around the edge so it's fat gravitates to the middle, then I remove the bacon and cook the pre-mixed egg in the fat, then I add the rice to that with a little white pepper... I actually simmer the soy in a separate pan until it starts to caramelize and become syrupy before adding it... I also cook some mushrooms separately then into the wok with the rice I toss in some peas, corn kernels, the bacon, the mushrooms and then at the end I stir in the soy and salt (salt makes the rice stick so I add it at the end) and then a splash of sesame oil for added flavour... delicious Special Fried 'Jasmine' Rice!

You can always try both to see what you like. Day old rice or even several days old rice is more firm and less wet, so it's easier to fry. Rice that is cooked earlier in the day and later used as fried rice works reasonably well. Thanks for viewing my video on Special Chinese Fried Rice.

So many type of sesame oil in the supermarket. Which is good?
I like "Yeo's Sesame Oil". When you buy sesame oil, make sure it says 100% sesame oil. Don't buy sesame oil that is mixed with soybean oil or any kind of vegetable oil because you won't get the full flavour of the sesame oil. Thanks for viewing my video on Special Chinese Fried Rice.

LOL, Not sure where you live, but I am curious as to what your version of what a tablespoon looks like. Mine isn't quite so big. In fact it isn't even close to being that big.

Can I use sesame oil?. Instead of coconut oil?
Sesame oil is more for flavouring. I would use a vegetable cooking oil, such as corn oil or canola oil. Peanut oil is great but more expensive. Olive oil is not as good because it burns at lower heat. Add the sesame oil in addition to the cooking oil. Thanks for your question. Thanks for viewing my video on Special Chinese Fried Rice.
You can not heat coconut oil very high. Very good brands tell you to add the coconut oil a the end for flavor & nutrition.
From what I understand, coconut oil has a higher burning point than other oils. Olive oil is the oil that has a lower burning point and is used for flavouring. Thanks for your comment and I will do some more research on this.
The smoke point of coconut oil is 350°F/177°C, which is about the same as butter. Refined coconut oil has a smoke point of around 400°F/204°C. So it just depends on what you are cooking. Dr. Oz says that it is fine to use refined coconut oil for frying but other sites recommend extra light olive oil (468°F/ 242°C), which has a higher smoke point. It's just best to do your own research and figure out what oil tastes better with a certain type of food. Good luck! By the way, Chinese Cooking Channel was not incorrect.
Nicole Lam Thank you for clarifying the smoke point of coconut oil. It would be the refined coconut oil that I use and it does hold up really well. What brand of soy sauce you use. Which is best for fry rice.
I like a brand of soy sauce called "Kimlan". I also use the "Lee Kum Kee" brand. Light soy sauce is saltier. Dark soy sauce adds some colour for fried rice and other dishes. I put a bit of both in fried rice. Thanks for checking out my video on Special Chinese Fried Rice.

Coconut oil is also one of the most saturated.
