As an Ulster scot from N.Ireland we don't put fruit in our soda bread, the soda is primarily used to mop up the juices from stews an gravy's or for you to add to your fry or as my great grandmother sent her sons out into the fields with a soda farl with bacon , sausage and a fried egg in it for their breakfast while they picked potatoes or turnips.
Stopped buying the bread because of the fruit so I buy a nice round sourdough ❤

I cook my corn beef for one hour then add carrots spuds and cabbage on top another 11/2 hour...then eats
I love Ruben Sandwiches. I do cheat on making the dressing, I use thousand Island salad dressing. I get disappointed when ordering a Ruben from a restaurant and the bread isn't toasted, I feel it's not complete without the bread being toasted!
Or grilled, I make my own thousand Island dressing. Plenty of sauerkraut. Cheese if you like.
