    I don’t have a recipe because I’ve just winged it. I’ve made a hot eggplant dip a couple of times and it’s so good. Basically for each large eggplant I roast a medium onion and whole head of garlic with the eggplant in the oven. Then blend them with the eggplants insides in my food processor with some salt, pepper, lemon juice, olive oil and Parmesan to taste. I serve it hot with little crispy bread toasts or fancy crackers.

      Is adding parmesan your own twist to the baba ganoush, or is it from a different region that adds parmesan to it? I have never heard of or tasted it with parmesan and was curious.

      @@mashal8915 I don’t think it’s technically baba ganoush at all. I just had some eggplants and wanted a hot dip so I made something up. I’ve never actually had baba ganoush either. If I get some good eggplants in the green this year I’ll try it.

    Ahhh HOMEMADE TORTILLAS!! When I was around 18-19 years old…I went to Mexico with my then bf. I didn’t know how to cook hardly at all. I’d never had a tortilla. This was late 80’s sooo…don’t judge me lol. I (as a woman) was expected to know how to cook so I stuck really close to his mom. I helped cook and grind the corn (holy cow that stuff is a beast to grind! I needed more muscle!) then mix into a dough (masa). I was constantly teased because I’d always make them lopsided lol. We had a cooking stone on the fire that we’d lay them on to cook. Homemade tortillas are so much better than store bought!! Even when there lopsided! Thanks for the memories 💜 Tamara

    I just harvested my first eggplant and had planned on making this dish. I came in from harvesting and saw your video and nearly jumped up and down for joy!     I just learned that Chinese egg plant has less seeds and is less bitter. I haven't tried them yet but looking forward to growing and tasting the difference

    I don't have a baba ganoush recipe, but I have a little story for you:
    I started making the farmers cheese a while ago, and I also brought some to my parents. My mom got very excited about it, and asked me to send her your video. She's been making the cheese now aswell, and it never lasts long. My aunt also requested your video, but she hasn't been able to make the cheese. My grandma's birthday was on Wednesday, and I made it with herbs, and my aunt got very excited about finally being able to try it.
    Personally, I prefere stronger tasting cheese, but I now prefere home made cheese over even high quality store bought cheese.
    Here is to spreading the love for cheese

      My daughter #3 HATES that I don't use a recipe. She loves my cooking but gets so frustrated with me when she would call and ask me how to make something. Last Christmas I bought an old fashioned recipe box and filled it with her favorite childhood meals and desserts. She just got married earlier this month and I wanted her to feel confident in the kitchen.

    Here’s my only suggestion (because this is basically my hummus recipe with the eggplant replacing the chickpeas or navy beans) is when you’re roasting something during hot weather…. Put it in a portable roaster and plug it in outside. Your A/C will thank you. 😄. My husband is in the HVAC business and I’m always talking my about this hack on my channel. IF YOU CAN PLUG IT IN OUTSIDE….DO IT! 😊

    I like to put eggplant on the leftover coals after I grill out and then make baba ganoush. The coals add a nice smoky flavor.

      Yes! This! On the off season, if you actually broil the eggplants, large ones for an hour, turning a quarter turn every 15 minutes, medium ones for 40mins, you can also get that smoky flavor.

    I cook that way too lol. I don’t measure anything. Cooking is more of an art while baking is a science. I guess if you want more consistency, it’s good to measure. 🤷‍♀️.
    It’s fun to experiment and see what a bit more carrot does to the dish this time around. If it changes it a lot, then you just make note of that.
    Cooking is a lot more experience than skill though you can do a lot by learning up on skills. But you really just have to do it yourself with your own hands to really get to know how to cook.
    I’ve been cooking for 20 years now and I’m always learning something new. It’s such a great hobby that is super useful lol.

We 🚫 take out but can always Add more 😊😅❣️... I ❤ Summer foods, n Farmers Market finds, I'm in a food Share n on Tuesday evening my daughter n the girls go, we all pay the same price for whatever is left the farmers have excess of n it varies week to week, n at the last table we can swap 1 item for something we like more than another, "Trade table" we also have a sampler table to tase of things they made with the items we got that day, n a booklet with a variety of recipes to make at home 🏡 they print out for Us 😮❤😋❣️... My grandkids all enjoy going with.e, n when we get done we go make something fun n yummy 😉 n good for them🤤💭❣️ I get 2 Shares cause I 🚫 have a large garden, n we always look forward to getting something New 😄 we got green Beans this week n I got extra to freeze so I can use as Needed they Are so yummy 🥰🤤❣️... I'm making a roast with the carrots gorgeous purple onions, n red 🆕 potatoes 🥔🤤😋❣️... Always a hit n we have enough for another meal too😅❣️...     JESS, there's a company supporting small farmers of heirloom corn that's been grown for centuries. It's named Masienda. They sell masa harina. Grains and Grit you tube channel just did a video all about them.

      I use them in my channel too! It’s THE BEST masa harina I’ve ever had! That’s coming from a Mexican woman who was raised in homemade tortillas household! Even my Mexico born mom agrees it’s the best she’s ever used!

    A friend of mine is from Trinidad and one day when I was over she was making Choka which is their eggplant dip recipe. And while it’s very similar, her “recipe” also included roasting tomatoes and also a whole roasted head of garlic and then just processing the whole mess with the rest of the ingredients you mentioned (salt, olive oil, pepper). I had never had Baba ganoush (sp?) but it was sooo good and I have approximated a version at home for myself. When you don’t measure anything, or the “recipe” you’re following is not measured, each time you make it will be slightly different but likely still good.
    But maybe try roasting some garlic and tomatoes into a batch and see what you think of it! Thanks for the reminder to me for when my eggplants starts producing! Bless you! Carrie (ps lovely meeting you at MurrayFest!)

    Thank you Jess. If you add some sautéed butter with the garlic add pistachio and mix in some yogurt it is called mutebbel. Refikas kitchen has many eggplant recipes. I urge you to check her out. Take care and bless you and your family Jess.

    I am about to finish my 1st time eating and making Baba Ghanoush along with the tortillas. You make the things you cook look so easy for me to try new things. I am a southern Tennessee cook that never measures anything as well just like my mother and grandmother's did.     all the recipes come from My Mom and our dairy farm unless stated otherwise
    In the sumer we would have family and friends come over for a Bar-be-cue which included Barbecue meat from animals we raised and buchered ourselves. The old fashion Ice Cream cranks (at least 2) with old toweld for one of the kids to set on and several people to turn the crank. After my Mom died I took her Brown recipe box and any other special recipes and saved them to my Recipe files. I also took her favorite recipes from all her Farm Journal cookbooks and put in my file. Along with a Family Recipe book I made years ago of each of my brothers(3) and sisters (2) and mine and made it for each of my brothers & sisters and their children and my Mom for Christmas presents. I am so glad I did because both my parents are dead and my oldest sister and 2 of my brothers. Now my 3 teen grandchildren will have those recipes.
    Recipe for: Butter Pecan Ice Cream From the Kitchen of: Esther Aderson
    Ingredients: 1/2 cup sugar
    1 envelope Knox gelatin
    1 Tbsp. cornstarch
    4 cups milk
    3 beaten eggs
    Ingredients: 1 Tbsp. vanilla
    1/3 cup butter (cut up)
    2 cups whipping cream
    1 cup packed brown sugar
    3/4 cup chopped toasted pecans
    Recipe instructions: Combine sugars, gelatin and cornstarch in large pan. Stir in half of milk. Cook till mixture thickens. Stir one cup of mixture into eggs yolks. Return to pan, cook 2 minutes. Stir in butter and whipped whipping cream and pecans. Cool and freeze.
    Chocolate Ice Cream makes 1 gallon From the Kitchen of: Esther Alderson
    Ingredients: 2 cups sugar
    1/4 cup flour
    1/2 tsp. salt
    4 squares (1 oz. each) chocolate, cut up
    Ingredients: 4 cups milk
    4 eggs, beaten
    2 cups (1 pint) heavy cream
    2 cups Half & Half
    2 Tbsp. Vanilla
    Recipe instructions: Combine sugar, flour, salt and chocolate pieces. Gradually stir in milk. Cook and stir over low heat until thickened and chocolate has melted. Add a small amount of hot mixture to eggs and mix well. Return to hot mixture. Cook and stir 1 minute. Remove form heat and chill.
    Add heavy cream, half & half and vanilla to custard. Turn into 1 gallon freezer can. Freeze as directed with your freezer.
    Four-Three Ice Cream Makes 1 gallon From the Kitchen of: Esther Alderson
    Ingredients: 3 cups heavy cream
    3 cups milk
    3 cups sugar
    3 cups pureed ripe strawberries
    Juice of 1/2 of a lemon
    1/2 tsp. salt
    Recipe instructions: Combine heavy cream, milk, sugar, and salt. Turn into a 1 gallon freezer can and churn-freeze 10 minutes.
    Mix lemon juice with pureed strawberries.
    Open freezer can and add pureed strawberries. close container and continue freezing as directed with your freezer.
    Fresh Strawberry Ice Cream Makes: 1 gallon From the Kitchen of: Esther Alderson
    Prepare Vanilla Ice Cream without adding vanilla. Freeze until mixture starts to thicken. Open freezer and stir in 1 1/2 cups fresh crushed lightly sweetened strawberries. Continue freezing until hard.
    Fresh Peach Ice Cream: Prepare Vanilla Ice Cream using 1 Tbsp vanilla and 2 tsp. almond extract. Freeze until mixture starts to thicken. Open freezer and stir in 1 1/2 cups fresh crushed lightly sweetened peaches. Continue freezing till hard.
    Fresh Strawberry Ice Cream - woodland paper (1990's) From the Kitchen of: Esther Alderson
    Ingredients: 4 cups Half & Half
    4 cups pureed fresh strawberries (or frozen strawberries, thawed)
    1 cup sugar
    1 tbsp. vanilla extract
    Ingredients: 2 eggs
    1 cup sugar
    1/4 tsp. salt
    3 cups whipping cream
    Recipe instructions: Combine pureed fresh strawberries, half & half, 1 cup sugar, and vanilla; cover and refrigerate.
    Beat eggs 2 minutes on high speed in a mixing bowl, Add 1 cup sugar and the salt to the eggs and beat for an additional 2 minutes, Stir in whipping cream. Transfer to saucepan and cook over medium heat until mixture begins to simmer, stirring constantly. Remove from heat. Cover and refrigerate 2 hours. Thoroughly combine chilled strawberries and custard mixture using wire whisk. freeze according to manufacturers directions.

    My favorite recipe of all time was one you made several years ago!! It was sliced fresh tomatoes, sliced eggplant and sliced onions with garlic and olive oil and it was baked. I made it at home and it was AMAZING!! This recipe looks great too and I have to try it!!!

    I'm also on my day 5 of my Sourdough journey. Cannot wait to bake my first loaf. I'm watching The Sourdough journey here on RUclips and he breaks it down perfectly. The science of baking is amazing. It's really not that complicated. People make it complicated and intimidating, it's actually not. If you have a friend with a starter they can give you or even purchase a starter, that would be easy. I have a started that i purchased as im fermenting my own. So if you want to start, dont wait. Experiment and have fun.

    Yay! I’ve been so curious about how you make yours. I make this all the time. In a similar way, with a few differences. For a smokier flavor I cook them for the same amount of time, but under the broiler, turning them a quarter turn every 10-15 minutes, large eggplants I’ll broil for an hour, no joke. It also makes a softer flesh that breaks up easier, because my Greek grandmother raised in Turkey said, never touch your eggplant to metal, no food processor, or metal bowl. She said eggplant picks up the metallic flavor. I’m not sure if that’s true, but I never wanted to find out. Vigorously mixing it, like you did, with a wooden spoon, after broiling it, makes it less chunky but still maintains a rustic texture. It really is the best thing ever.

      The best baba I’ve ever eaten at a restaurant was at a Turkish place in Queens NY. It was so good because it was smoky. I once went there as they were pulling the eggplants out of the ovens. They were charred! That was their secret. It was the broiling that had mine tasting just like theirs.

    I also like baba ganoush. However, I'll say the one thing I like about it most is...that it does NOT taste like eggplant. Just thought I'd throw that tidbit in for any other eggplant-haters.     I love love LOVE Baba Ganoush. My mouth is watering and will be making some like NOW!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Just have to get some eggplants. Thanks!! Hummus is good, but nothing is like Baba Ganoush.

    I just picked a handful of eggplants this morning and now I know what I am going to do with them. I have made baba ganoush in the past but this reminded me it would make a good appetizer for my 4th of July party. Thanks Jess! Oh and I like to top mine with Zatar and a paprika!

    YAY! I've looking forward to this recipe since you mentioned it last year. My eggplants aren't quite ready to harvest but getting close and I already have all the other ingredients ready to go.     In Romania we have a Eggplant-Dip too! It’s called “Vinete”.
    It consists of grilled, skinned and mashed Eggplant (to the point that the skins are almost burnt),finely chopped onions, homemade mayonnaise (I use a egg yolk, 1tsp of mustard and oil) and salt. Very simple and easy but my favorite. I just eat it on a good slice of bread😍

    I love Baba Ganoush!.. Thank you for sharing.. I love eggplant fried, as a noodle substitute in lasagna and really any dish.. My husband does not but he loves Baba Ganoush.. Will try this .. thank you.. Tahini is very easy to make if you can't find it in your store. It's basically toasted sesame seeds with olive oil and salt. Your videos always brighten my day!

    If my egg plants produce, I will certainly try it. I love tahini and hummus so I am certain I will like it. Besides, the little dance was incentive enough...Great video. Will check out Chrissie's too - she has done very well.
