Those images from about 100 years ago are so high quality because most photographers were using very large format cameras, using either light sensitive glass plates (which can go up to like 9 inch by 12 inch in size, although they are larger sizes on film) and the light is being captured on microscopic crystals. Just imagine a digital camera with a sensor the size of a window, you'd capture a hell of a lot of detail.

Well it wouldn't really have worked. Photography (until late 1880s) was mostly based on light sensitive glass plates, and in the beginning, the chemical coating was liquid, so the camera had to be within a photo studio in order for the photographer to be able to use the camera. Dry plates started appearing in 1871, but as cameras were bulky items to begin with (with the glass plate being at least a few inches in length and height), getting the photo to look right from 3 slightly different angles wasn't really possible. Also I'm betting there was hundreds of hours of post processing work put into making those slightly darker and lighter black and white images a colour image. Although the colour film that we have today is sort of similar, being sensitive to cyan, yellow and magenta only.
0:00 that actually isn't fake, it's a trick used by germans were the vent has 2 paths, one into the bunker and another leading downwards. And the way the trick is built makes the grenade land on the enemy's feet.
