I know these can all be made by hand. but the machinery and instruments they used made those things look perfect. Aside from the work of the very skilled chefs that is. The dough was perfectly kneaded with perfect gluten build and strength. So smooth. They worked very efficiently and froze the dough in between to keep the butter nice and cold. It was nice to see a commercial version of this hard process. Not to mention that I learned a few tips in the process.
This is not a "hot to" video lol. This is us watching them make the food
I like the fact that in one of those last bakeries, the person making the dough does not throw away the extra dough pieces but instead reuses them on the same croissant dough that is being flattened until the whole dough turns out perfect. That aspect of not wasting anything is just everything! For that, I would give them a 5/5! 😊
But the very last shot is of them 'wasting' a perfectly croissant for the money shot. That isn't going to be sold. In the spirit of not wasting, I'm sure someone ate it, fallen whip cream / custard included. Or maybe they really did just discarded the thing.

We need a version of this that can be done with less machines
I’m not sure about some of the yummy food in the first video but the croissants can all be done at home without machines since we wouldn’t do “mass production”. 😂 My problem is that I don’t know the ingredients for all the creams they put in them. Do you know of a website where I could find that out or do you happen to know?

Too bad they don’t put the ingredients in a pop up or something. There’s so many in these videos that I can’t figure out what they are. I did come across a few that showed them as they used them but only like 2 out of a bazillion videos.
