@@jakecoop562 yes......but with some species of fish you can get away with it....like ones that have short life spans :P although in the US only 10 cases of parasite infection are reported each year so......it isn't really a worry with a professional in charge. edit: i would also like to say don't try to eat fresh water fish raw....they have parasites you can't see with the naked eye, always cook fresh water fish.
@@jakecoop562 we have Aku and kawakawa that are both similar to bonito. We never flash freeze. Straight from the ocean to plate. But yes since the parasites are rice worm sized it's easy to pick out while cleaning. But definitely worth it.

I'm sooooo glad I'm not the only one who absolutely loves fresh Bonito! I have others, even other Tubers, who laugh at me and tell me it's a trash fish and disgusting. I always try to explain prepared properly and/or cooked properly and fresh it's outstanding! The lightly seared exterior with the raw interior is my favorite. I've eaten it with Finadene sauce before, basically a Chamorro variation of Ponzu. I've also done a Wasabi, Mirin, Rice Vinegar, and Soy vinaigrette with a bed of romaine hearts. Delicious!

Went out of Newport and caught some Bonito as well, got home had some sushi, I also canned some, smoked some and seared some, the rest of the trimmings got boiled and used to add to my dog food, great vid and I approve this message

No it isn't, this is not the same fish people call Bonit'A' (false albacore/macktuna in other parts of the world), this here is the TRUE Bonito, a small relative of the dogtooth tuna, a fairly highly regarded fish in most parts of the world.

The wife and I love your videos. We do a lot of spearfishing out here in Puget Sound Washington. After watching your videos I am inspired to bear batter one of my next lingcods I shoot at the beach this next season.
I have just started fermenting my own vegetables this September. Tonight I made a salsa, it only takes 3 days, also I started a batch of fermenting carrot sticks, garlic and jalapeños tonight. I am waiting for my sauerkraut and I just moved my Italian relish into the fridge, that is cauliflower, carrots, onions, bell peppers and jalapeños. There are many videos about fermenting your own veggies. Another method is using honey, I have honey garlic and made a batch of honey cranberries, orange juice and cinnamon sticks. Any of the honey ferments would be great drizzled over some of your dishes.

Love this video. The food looked so delicious and so many of the shots were really nice, especially the ones with the drones. Also if anybody's wondering, immedietly killing a fish like that is both more humane and prevents toxins in the fish that you would get if you let the fish slowly die out.

Watching this brings a little happiness and sadness at the same time. Back then, the idea of making a plate and share it with the people around you was never a big deal but now, he has to take covid into considering and make a separate dish for himself and Jocelyn. 2020 really changes our ways of life that we never really taken into consideration before. On a side note, food workers wearing mask is good for sanitary reason.

miss SD immensely. Lived in SD for 40 years and just relocated to NC a few years back. SD is still home to me but just couldn't afford it anymore.
