Happy Birthday! I am not a vegan, yet I wanted to try it out. So, I made this cake yesterday for Sunday dessert. It is good, however, next time I will use butter and eggs (free range and grass feed), for the cake texture I was looking for. My husband loves it. He took a lot of it to work today. Lol. Again, great healthy recipe.

up4atgal Mmmm, I love chocolate cake! This icing is truly the bomb. Use more cans of coconut milk/cream to make even more in case you're doing layers :) Thanks for the bday wishes and for watching!
My fave is carrot cake. You could probably use this recipe for that right. Just swap the shredded sweet potato for carrot. I would also use pineapple and raisins for the sweetness instead of sugar.

The cake was gorgeous and super super yummy! However, this is my first time ever using coconut milk in a can like that and both I bought are liquid. I see you're using the Thai version so I picked it up and it was liquid so it's been in the fridge now for a few hrs. Will it solidify overnight or should I buy a different brand? I'm just clueless. Haha thanks!!!
