Base genep, meaning “complete spice” in Indonesian, is an aromatic seasoning paste that is an essential ingredient in many Balinese dishes. Here to show us how it’s made is our guide William Wongso and Hindu priest and barbecue pit master, Chef Gede Yudi Awan. Chef Yudi is the owner of the restaurant Warung Sunset Chef Yudi in Badung, Bali, an establishment famous for its barbecued pork ribs.

He said, but it was pretty fast. 7:08. They're salam leaves, or Indonesian bay leaves. I've never made this myself, but I read that bay leaves are a poor substitute. Curry leaves work, but if you don't have either, it's better to leave it out completely than substitute with bay leaves.

I've found quite a few recipes and videos and such about how to make these spice pastes, but what I want to know it what you do WITH them. Like how do you use them after they're made? Can you just throw them in anything like any spice? Is there some trick? Are you supposed to make a sauce? Like, I've never seen a recipe that calls for base ganep or base de sampi and then tells you what to do with it in the directions.
Kindred Toast you can use it as a base to marinate sate/satay or other minced meat in a skewer.

sauteed right away, the spice mix can be store in a fridge for a couple days, u can use it if u want to make some balinese dish
