I made mine with cauliflower rice and I didn't like how my rice came out. I thought the bowl was a lost cause but the shrimp and mango salsa was incredible!!! I mixed my cauliflower rice with all the ingredients in the bowl and it was amazing!!!!!

I've got to say, though, "add another shrimp to the barbie," is not an Australian saying. We call them prawns, and we mostly barbecue steaks and snags (you call 'em sausages.) I've never seen anyone barbecue a prawn.
I'm just curious but as a college student how would you meal prep this to last for 3 or 4 days? I really want to make this but I meal prep everything and I'm not sure how to go about doing the same with this recipe. Any suggestions would be great!
Sarah The slaw and salsa should last for 3-4 days. I would keep everything in separate containers. Or find containers with separate components. The shrimp, I would marinate and freeze in separate bags. When ready to make, take out and pan sear or bake!
Sarah T I'm personally not a fan of leftover seafood more than a day so I would prep everything else at once and then make two servings at shrimp at once then make two more a couple days later. Or you could make it fully vegetarian by adding tofu/tempeh or cooking mushrooms, bell peppers or eggplant the same way as the shrimp.
I am going to make this myself next week at my dorm. I am going to make a big portion of rice for the week. The mango I am going to do last minute and keep the rest of the mango in a container. The slaw I think is best to put the dressing on last minute, but I think you can keep it the leftover for the next day for lunch. The shrimp you could easily marinate and freeze

I'm with you. I grew up in the Midwest but worked in a French bakery where I was exposed to some French food but I also was introduced to Lebanese/Arab food because the owner was Lebanese, one of my BFFs was Jordanian/Palestinian, and my boyfriend around that time was also Lebanese. I love Vietnamese food because of the freshness of the herbs and veggies used but I also loved the flavorful Laotian food that my parents made since they lived in Laos, where I was born. None of my non-Asian friends were really into Mexican food. I've lived in TX for about 15 years total and hardly ever eat Mexican or Tex-Mex. I'll make it for myself every now and then and I enjoy it okay, but it's not a top 5 cuisine for me or most of the people I know. I can see the appeal for Korean and Japanese as the food is very good. And Thai and Vietnamese as it's great, too. But for me, Mexican and Indian are definitely not top 5 - there's a heaviness to them that I don't favor, especially Indian because it's strong on the spices and everything is cooked down to within an inch of it's life - totally opposite of the vibrancy of Vietnamese where herbs and veggies are used in abundance and we do not cook down our herbs but often eat it fresh. I'm surprised you don't do more Mediterranean as some of that touches on Middle Eastern like the hummus (everyone's favorite but mine), tabouleh, baba ganoush (I love this stuff, I dip it in my tabouleh and feel so healthy eating it), shawarma, etc. Because their food is Mediterranean or similar, it's very good and healthy.
BTW, I dated a guy from small town USA who only ate meat and potatoes for the most part...he was my BFF for like 8 years before we dated. For me, he was the worst boyfriend ever because of the food thing. felt so restricted all the time in my food choices. Then I saw my cousin marry someone like that and she is very adventurous in her eating, luckily she's not rigid as me when it comes to coupling a guy who is her culinary opposite. I would never date anyone who doesn't have an extreme knowledge or interest in different cuisines; anyone with a limited culinary repertoire and is not adventurous or imaginative with food and cooking will be swiped left (hahaha...I don't online date, but you get my gist). Then again, it'd take a lot for me to date anyone since I'm so picky and was never matrimonially minded to begin with. Solo rider all the way! LMAO
I like her recipes and our style of cooking ... but I didn’t like that she kept the tails on the shrimps... they should’ve been removed bc who wants to be eating and have to go in your mouth to remove the tail
