The red spinach like leaves is called lal shak (red amaranth) slightly vegetal, nutty taste and very good for you, the little dollops or balls on the side of the plate are called bhortas, normally pungent and concentrated flavour of whatever the ingredient is, designed to be mashed and eaten with the rice. At my favourite restaurant that serves food from different regions in India, the deep-fried cauliflower is served with a sweet chili sauce; so delicious and paired with masala chai tea, it's divine 😋 I love the cardamom in it and I spend a fortune every month ordering masala chai tea from India 😂

In UK nearly all "Indian" restaurants are run by Bangladeshi chefs, we were told by a restaurant owner.
That is similar to Japan, where the majority of Indian cuisine restaurants employ Bangladeshi and Nepalese alongside Indian staff.
It's true. The majority are from the region of Syhlet.
A typical curry house in England has both a Bangladeshi owner and chef. The chef is not usually the owner of the restaurant he works in.

The kebab salad looks heavy on the kebab, light on the salad.
You're supposed to mix and the dips together on separate plate then eat then with the Roti , like you do with poppadom and pickle tray in an Indian.
