    That's an awsome dish! We cook sth similar in my family when we organize family barbeque. We cook it outside on the open fire and serve it with barbeque meat. Delisious!
    Akis, your food is amaizing, and this dish is not an exception) Thank you very much!

    My grandmother used a wooden spoon to "cut" the cooked eggplant, not a metal knife and it makes all the sense in the world because the wooden spoon does not cause oxidation. You could avoid plastic in the kitchen, a simple clean towel is enough to protect the pepper :)

    You can put the eggplants under the broiler. Be sure to watch and turn.

    You left so much burned skin on them though , we usually splash the pealed veggies in salted water to remove those :)

      He left it on purpose for some smoky taste. A lot of greek chefs do it this way

    Now, I wish I didn't have a ceramic stove-top. I guess I will be buying a BBQ this summer, just to try this recipe. :)

      My electrical oven broke so till got fixed I temporarily got a camping gas stove. It's very inexpensive, tiny and the little gas replacements are easy to find and cheap. I just love it! It heats everything up wwwwway faster and I still use it specially in the morning when I'm in a hurry. It would work perfectly for this job or stir frying.

    Lookes lovely - though I suspect that I'm not alone missing the gas stove... Glad I can make it on the grill.
    @Akis Kitchen: I know it isn't greek but I would love to see you make catalan aioli - that is aioli without the egg as they make it in Catalonia. For me this is a hidden gem that I make every time I barbecue meat - even though I'm from Sweden :)

      Hey! One Catalan here. As RubarbPie rightly says, the true 'allioli' is exclusively made with garlic (all) and oil (oli). However, we normally add an egg, as it thickens more easily. If you give the original allioli a go, you'll know you have succeed if the pestle stands still in the mortar by itself, or if the allioli doesn't move when inclining the mortar. I'd say the best tip is to start by grinding the garlic and make it cry so that it releases its sort of saliva. After this, it all boils down to patience: never stop mixing while very slowly pouring oil until it thickens.

    Hello Akis,
    Since I do not own a gas stove, can I heat the eggplants and the pepper on top of a regular stove? And if not, how would it affect the taste If I roasted the eggplants in the oven, the same way you do in your steak video for the baba ganoush? Thanks.

      It's summertime, I'll do it at the next bbq. Simply place the eggplant over the coal on your grill and you get an similar smoky taste ;)

    Hi Akis !!, loved your greek yogurt Cheesecake do you have a recipe for greek yogurt tiramisu ??, just tried one from a fridge and it was acceptable I recon you might be able to beat that by a lot, so anyway thanks for the vidéos and all! =)

    i once read that in medieval turkey, a sultan forbid this recepy, because common turks made fire to do it, and once such a fire spread. so to get rid of all the fireplaces, the sultan just forbid to roast eggplant.

    i enjoy eggplant a lot but is there any way how to bake eggplants without making so much mess on stove. After they are cooked there has to be so much burned juices on stove. I will clean it longer than i will make this recipe

      I like to prepare under an oven broiler :) prick them before and rub with oil all around.

      You can do it in the oven but cooking them on a gas stove like this gives them a smokier flavour. You can achieve the same effect by putting them on the barbecue.

    Nice reçine BUT , why on earth do you call everything Greek … this technique of charring veg and making a salad based with a olive oil sauce is all over the Mediterranean and far down inti Lebanon Syria etc .. and Greek olive oil WTF , does olive oil speak a language … just cut the patriotism which has caused us so much harm and cook food … if not I have a special Mediterranean recipe you’ve never heard of … just label that Greek as well 😆

      No, the gas is all ignited. There is no gas there that isnt on fire.

      Ok thanks, i though it would be dangerous to put something that was in contact with gas into your mouth because of carbon monoxide poisoning or something.
