He seems to cherry pick the LEAST eligible workers, which can change lives in ways that can't even be anticipated; giving a sense of self worth, learning REAL WORLD skills that can help both personally and employment, gives these guys a way to make a living that keeps them off the dole and away from welfare....

Neither the women nor the man doing the menu know anything about pricing. Cost price each item used to make something, e.g a sandwich - 2 slices of bread, butter (or margarine), filling (including things like salad, pickles, etc.), wrapping, then triple the price. That allows 1/3 for ingredients, 1/3 wages, and 1/3 utilities and washing up, etc., 1/3 profit. A little work to start but make a list of each item along with cost and there is a handy table ready for any eventuality. No guessing, no chancing or anything like that.
That's not how it works. The item costs £1 to produce, so they triple the price and sell it for £3. That puts them £2 up. But simply splitting that £2 into thirds means the "profit" is evenly divided three ways and spent on other things, which means no actual profit at all. They could scale up the operation by putting more bacon rashers on the grill etc., which would use the same amount of energy but cook more bacon, which could then be sold at the marked up price.

Terry isn't doing everything right. My local BIG salvage yard buys older or accident write off cars *very* cheaply. They do not crush or grab and ruin the cars. They take EVERY useable undamaged or working part off it, from the tires, to all panels, all doors, all seats, all lights, bumpers, hood, trunk, radio, engine, battery, etc, etc. The left over shell is sold as scrap for usually what they paid for the whole car. Result is that they now have $2 million dollars worth of used parts to sell or install, which cost them nothing to buy. Total profit. They also do car repairs in 4 bays, and sell and install the good used or new tires. Every part is computer listed. They can locate any part you want, for most cars, in minutes. Plus, they don't run a lousy, unadvertised cafe. Terry could learn a LOT from studying them.
Mike12522 I think if he just put everything on an inventory with a couple of scanners to locate the parts in their bay, he’d be laughing, he knows what he’s doing to be still trading 20 years after starting, just needs to upgrade his systems
