I cook them for only 2 and a half or 3 minutes each side then remove them from heat as lamb should be eaten pink, which is how I prefer it. As with all protein, they continue to cook when removed from direct heat and covered with foil. This recipe is good if you want really well done. The sauce is very tasty and a nice addition. Thank you.

I just got done more or less following this recipe. I took them off the pan slightly early because the outsides were looking burnt, but the insides ended up being pretty raw (even after resting). I put them back on for the full time and they came out really good, albeit with burnt outsides, which weren't a terrible contrast to the medium well insides, but maybe not to everyone's liking.
I think the problem is we had pretty thick chops. For those with thick chops, you may want to consider popping them in the oven for a bit before pan searing them, just to avoid burning the outside before they're done.

For folks who want their lamb chops less done, just remove them.from the heat. Aluminum foil has...wait for it...aluminum in it, which is bad for your brain. Worse for your kids' brains. Try to avoid putting your hot food in that schiznit

I prefer to cook my lamb over fire. Nothing like when the flame meets the meat. That's how a true carnivore loves his flesh seared over the Open Flame.

@@ClarissaCulinary the best way to make the lamb is with Moroccan flavors that's where it originates from and then put it over the Open Flame. Look into how the Turkish people prepare it and then you will start to learn a new flavor I'm an Irish man but I do love some delicious food no matter what type of meat as long as it's tasty Im like the T-Rex of The Culinary scene I tear shitt apart

Like all the ingredients, the process, etc. The finished product looks too well done. My father prefers well done for if I prepare for him it will go 4 minutes per side. To appeal to most I wouldn't go more than 3 minute's, more like 2 since those are less than an inch thick. Otherwise well done (friendly pun intended)
