Watch Before You Make Chinese Fried Rice | Wally Cooks Everything

  • What kinds of rice do Chinese takeaway restaurants use to make fried rice? There's no secret to cooking fried rice the same way your favorite Chinese fast food take out makes it. It's just a little bit of common sense and one major ingredient which you'll learn about in this video.
    I'll be using the classic Chinese Yangzhou Chow Fan to illustrate my point. It's got shrimp and Chinese char siu and who doesn't like those? Remember the tips you learn here and you'll be able master all kinds of Chinese fried rice dishes.

    ►INGREDIENTS:
    400g (14oz.) Cooked Thai Jasmine Rice (overnight refrigerated rice)
    2 Large Eggs
    200g (7oz.) Chinese Char Siu (half fat and half lean)
    90g (3.50z.) Shrimp approx. 12 pieces peele and deveined
    1 ½ Cup Peas and Carrots
    100g (4oz.) Romain Lettuce
    1 Tablespoon Soy Sauce
    Salt to taste
    ►RECIPE:
    Gently separate jasmine rice with your hands careful not to break the grains.
    Beat eggs in a bowl with 1/2 teaspoon of salt. Cut char siu into cubes and shrimps in half if you wish. Rough chop romaine lettuce into bite sized pieces.
    In pot of simmering water add peas, carrots and shrimp. Cook shrimp until it starts to turn pink and white. You'll finish cooking it through later.
    Heat wok or pan on medium high and when it smokes add 4 tablespoons of cooking oil. Then add beaten eggs and cook until the outsides start to set firm. But making sure the center is still uncooked then drop all the rice in and coat the rice with eggs.
    Then switch on to high heat. Continue stirring and mixing. You should hear the rice sizzling and when you see grains start to pop around it is time to add char siu.
    Lower heat to medium and continue stirring and mixing the char siu, the fat from char siu will flavor rice. Continue cooking for a minute then add peas, carrots and shrimp.
    Mix thoroughly and then add 1 tablespoon light soy sauce and 1 teaspoon salt continuing mixing for another minute then add chopped romaine lettuce continue cooking for another minute or two.
    It's finished. Enjoy!
