Any Chinese would feel at home in Brittany. I prefer where they have the spinning instead of fixed top, it's more of a show, and it cooks faster too. I'd rather have the egg be spread on the cooked rather than the uncooked side somehow, even if it's thin enough to be cooked. I guess I'll have to try both ways to compare. Replace the youtiao with a slice of ham for me though, and make the batter from buckwheat. Oh no, that wouldn't be China, but Brittany again! ;)
I'd never buy food from a street vendor in China. You never know for sure the origin and quality of the meat but maybe even more importantly, you never know if they've used gutter oil in preparing the food (if you don't know what gutter oil is, google it or better yet, youtube it)...
