Today in the kitchen studio, Yewande Komolafe is making her Corn and Shrimp Beignets. In her recipe, a light batter coats pieces of shrimp and sweet corn kernels, delivering a savory bite that’s perfect for picnics, a finger-food weeknight meal or casual get-togethers. Lemon zest and ground cayenne also add a bright zing.

I loved watching Yewande cook this recipe, which I had noticed in my NYT Cooking app. Although I dislike frying foods at home, I love eating them of course, and I feel inspired to try making shrimp and corn beignets after watching this video.

I just made this today. So good. My mom loved it, too. My local store didn't have chives so I used green onions. I also squeezed lemon juice into the mixture. 😊

I always find frozen corn (thawed and drained if desired) has a better texture than canned when used as an ingredient.
