It's probably because you don't have this sound in your own language. It's usually easier to practice a sound in longer words. Parfum, chemin, matin, demain (all of them sound like un)
Is ces pronounced the same as c’est? The “es” small words you mentioned here, I thought all those worlds are pronouced as é? Please help clarify. Thank you.
It can be pronounced as both. Just like ai at the end of verbs is pronounced either é or è. Both sounds are the ones that we switch the most in French. I think I added a few lines about it on my first comment as well. I hope it helps :)

I don’t know why but ‘ais’ in Français, jamais, and some other ais words sound more like é than è.
It really depends where the person is from, é and è are the most mixed pronunciations among French speakers :)

It doesn't feel like the "ais" in mais is pronounced the same way as the "È" in "mÈre" though or am I just crazy?
That's because the R in Mère accentuates the pronunciation. But they are pronounced the same 😉
