I highly recommend watching the Ice Age Farmer RUclips channel and look at some of his recent videos to understand why he is concerned about food shortages in this country coming soon. I would love to learn how to preserve that beautiful fudge you just taught us how to make. If you could look into that and do another video to show us how to preserve some of the foods or even some of the components of the foods so that when you need to make a recipe, you can pull it out of storage. For example, you can scramble about six large eggs in a bowl and then put them in quart sized Ziploc bags and lay them flat in a baking dish and put them in the freezer and freeze them that way. Once they are frozen flat like that, you can take them out of the baking dish and package them into larger plastic bags. They can stay stored that way for up to two or three years. I have been making this similar fudge for 38 years minus the butter and microwave. Into a double boiler add the milk and chocolate chips (semi-sweet), do not let the top of the double boiler touch the water level. Once it comes to a boil, turn off the stove and let it sit stirring only when the chocolate starts to melt. Stir a little a possible. Add vanilla ( I use 1-tbl) and nuts if using. I pour into a foil lined 8x8 and chill. Easy peasy!
Since I don't have electricity hence no microwave, I make this recipe in a double boiler, placing my bowl over a pot of GENTLY boiling water, NOT touching the water, stirring the whole time until just melted, then pour into a greased pan
That looks so easy to do! I'm going to try it. One question, why not a metal pan? I do not have a glass 8x8 nor a glass 9x9 however I do have a metal 8x8.
I make this fudge and I put it in microwave 30 seconds take out stir ,30 seconds more stir , then add walnuts put in 30 seconds more, pour onto parchment paper, spread evenly, set in frig for about 4 hours or even overnight, slice, stack on plate and serve. Quick treat to share at any get together, or hide it and eat it all yourself.
Nope, the Aldi chocolate chips don't melt correctly for things like fudge. They work and taste fine, though, in cookies, scones, etc., and are very well-priced.

I wondered the same thing. I'm guessing that you could use a metal pan if you lined it with wax or parchment paper.
