The coconut is ripe. If they are green outside they taste the best. In this state the coconut hat plenty of water and just a little amount of jello line flesh. If they get older the hard shell is formed, the water is mostly gone and there is more flesh and it is hard. If the hard shell is formed the water taste old and is not really good. Just try a fresh coconut and you will see the water taste amazing. The problem is you just get them at the coasts of asia like in thailand, malaysia, at the phillipines and so on.
Your comment is a year old but I just wanted to say this is called “young coconut” and it it usually sold at stores with the green skin already peeled off. There is still a hard shell, but it’s not as thick/dense as a mature coconut. As the last comment mentioned, these young coconuts are best for coconut water - it is plentiful in the fruit and fresh tasting, nothing better in my opinion. The flesh is thin and a little soft, it’s very tasty. The mature coconut has old water that is not so great for drinking, but the flesh is thick and also quite tasty in its matured state! Hope this helps (:
Americone, try to cut the inverted picanha and make a barbecue inside the motor of the unbreakable Jetta

Were either of these coconuts even ripe, the inner hard shell didn't appear to be formed!
