Well first let me say the way your mother in law told you how to make it, that is not the way I saw my mother, grandmother and aunties did it but your way looks very good and delicious, I will try making it your way.( mother in law)

I actually don't use sugar when I'm stewing fish. I fry mine, dusting with a little flour and a tad bit of cornmeal; then I sautee my veggies allowing it to come to a simmer, put in all my ingredients, then the fish last. Believe it or not, the gravy is thickened with just the flour the fish was fried with.

am making this 2day. but used to cook suriname style coz am from surinam. but saw this n gonna try it..coz i dont use sesame oil or soy saus in it. but wil today u have a fb page i can share .
I guess people living in the City cooks differently. You don’t put Ketchup in stew fish. You use very ripe tomatoes, that gives all the flavor. Ketchup takes away from the natural flavor.
have never made fish with oyster sauce have to try another way to stew without sugar thanks. i have seen on a informative one christmas that they use ookoo to make pork in paramin maybe you can look into that for us pls thanks.

I just tried it. I didn't have oucou so it tasted a little ketchupy. But it's by far the best stew fish I ever made! Thank you

Hi Natasha, I was looking for a recipe where you don't have to fry the fish...couldnt find any, so I made it the way I know, was delicious.
Hope you enjoy, i will work on a recipe that's not fried.
Cook sauce till thickened a bit, add seasoned fish and allow to cook for about 2 mins, flip cook for another 2-3 mins basting with sauce

Dawna Maria, you can also mix the flour with water, not too thick and strain it.....that way you wouldn't get the lumps.

It holds the sauce better,but if you don't want to you can omit that step. The oyster sauce is not as strong. I recommend not altering it.

Of course just omit it.
I know for pastelles ppl use tomato paste as a substitute for roucou. Not sure if that can apply here
