    Trini food is delicious I live in Georgia in the US. When people taste our food they're impressed. Trini to the bone.

    I'm sure this may be very tasty, but the Trinidad stewed fish does not use any Chinese seasonings. In fact the base is done with a roux, then you add water, ketchup and seasoning.

    I just tried it. I didn't have oucou so it tasted a little ketchupy. But it's by far the best stew fish I ever made! Thank you

    What a sweet girl, sharing her mom-in-law's recipe. It's great when in-laws get on with kids. Lovely recipe Natasha. Going to cook it today minus the annato liquid. Could not find fresh or frozen cassava by the way. Am going to use the cassava flour and keep you posted.

      yes she is and we have a great relationship. I wish you could find the liquid or the seeds. yes waiting to find out how the powder works out.

    This looks delicious. I will make this for my Dinner I always make a Roux before adding the vegetables because when I add the flour after it gets lumpy. I made the cassava for the second time yesterday.It was a request. Served with the Baby back ribs.Thank you soooooo much.

    I finally know how to make stewed fish - about to make it for the first time... thanks for the recipe... quick true story when my brother and I were kids we wanted to make stewed fish for my parents anniversary so we put sugar to brown ... well, the rest was history.

    Hi Natasha, I was looking for a recipe where you don't have to fry the fish...couldnt find any, so I made it the way I know, was delicious.

      Cook sauce till thickened a bit, add seasoned fish and allow to cook for about 2 mins, flip cook for another 2-3 mins basting with sauce

    it's always nice to watch and learn how other people make basic dishes. I saw the occo here in Trinidad in the bottle had no idea what to do with it. lol love the oyster sauce in the fish will have to try it, and I didn't know how to add the flour I usually get flour lumps, very informative thanks.

      Dawna Maria, you can also mix the flour with water, not too thick and strain it.....that way you wouldn't get the lumps.

    Well first let me say the way your mother in law told you how to make it, that is not the way I saw my mother, grandmother and aunties did it but your way looks very good and delicious, I will try making it your way.( mother in law)

      yes try it out it's healthier since no sugar is used. I more see the older folks stewing this way.

      I actually don't use sugar when I'm stewing fish. I fry mine, dusting with a little flour and a tad bit of cornmeal; then I sautee my veggies allowing it to come to a simmer, put in all my ingredients, then the fish last. Believe it or not, the gravy is thickened with just the flour the fish was fried with.

    Would like to give this a try! Couple of questions though---> Is it necessary to fry the fish first or was that just a preference? Also, is oyster sauce similar to hoisin sauce?

      It holds the sauce better,but if you don't want to you can omit that step. The oyster sauce is not as strong. I recommend not altering it.

    am making this 2day. but used to cook suriname style coz am from surinam. but saw this n gonna try it..coz i dont use sesame oil or soy saus in it. but wil today

    I guess people living in the City cooks differently. You don’t put Ketchup in stew fish. You use very ripe tomatoes, that gives all the flavor. Ketchup takes away from the natural flavor.

    I MADE IT AND I DIDN'T HAVE CELERY SO I IMPROVISED WITH CHADON BENI AND I DID'T HAVE THE RED SAUCE ...SO IT CAME OUT A LITTLE DARKER.

    have never made fish with oyster sauce have to try another way to stew without sugar thanks. i have seen on a informative one christmas that they use ookoo to make pork in paramin maybe you can look into that for us pls thanks.

    You mess up di whole dish by adding all that Chinese ingredients. Wah yuh think yuh making gurl? Chinese stew? Smh!!!! Alyuh foreign trini’s dis get dohtish when alyuh leave Trinidad Eh?
