    I'm American, but my family were Italian immigrants. We love whole fish! The meat around the head is the best part.

    Americans with Geechee ancestry cook whole fish just like you do. We eat it often, and we don't prefer fillets. We want whole fish. Something we cook it with cornmeal.

    Brown stew fish is one of my favourites but hard to find a good one in London!! I'll be trying this out for myself!

    I'm from the UK, we usually eat fillets of fish. Strange seeing entire fishes cooked for me, but we do have scale-on fish more than the US. We cut the heads though XD
    You ever tried Smoked Kippers my friend? Texture to die for, melts in your mouth. Perfect with Scrambled Eggs on generously buttered toast. A perfect morning meal before a big day. Season liberally with Pepper, and have a big drink for all the oil. ;)

      I've never tried Kippers, sounds good but red herring is relatively popular here. Doesn't melt in your mouth though 🤷🏾‍♂️😆

    Thank you for this recipe. It is fantastic, precise and the presentation is beautiful. I am going to make it but I am considering adding okra. Would you,recommend okra or no?

      sure okra is a great addition, personally I like to add it to the pot late so it's still crunchy instead of slimy but you can't go wrong with okra and fish

    I have seen some people leave the scotch bonnet in the oil the entire time when frying. The pepper invariably turns black. What is the reasoning behind this?

      The scotch bonnet infuses flavour into the oil and flavours the fish a lot better, I'm not sure why people leave it in until it turns black because it eventually starts to burn and taste off.

    Is soya sauce the same as soy sauce?

      its the same..."soy" is how most Americans say it and "soya" is how most British say it.

      Fish have a wide range of eye colours even in the same species. Dull, pale or cloudy eyes means the fish is not fresh

    It looks good BUT it's not traditional. It's has notes of yard but it feels like chef school not Granny cooking
