I used to help build custom kayaks at New Wave Kayaks in Middletown Pa. We once laid up a C1 with kevlar that ended up weighing only 17 pounds. I remember vacuum bagging it. Thx for sharing and explaining this. My buddy bought the business and moved his shop so I don't get to see much building going on anymore.
For the deck: I believe that the lighter weights of fabric show less of a woven pattern, and as such are best used for outer layers in order for the surface to be smooth. From there, the 9oz fiberglass is pretty much the same thing just thicker, because appearance is less important. The honeycomb is added to the middle because it has no durability, and instead only serves to thicken the composite for rigidity. Finally, the kevlar is on the inside for a final addition of rigidity. Presumably the kevlar is the strongest layer, and since the boat is more likely to flex inward than outward, tensile strength is most important on the inside.
I purchased 2, took awhile to get them but at the time no one had Kayaks. these are great.

how expensive is to build custom kayaks?

What is the thought process / design reasoning when choosing the different weights of each layer of fabric?
