Me and Miss Sheila have something in common, that's, we both love Jalapeno peppers! I can certainly say( with all the confidence in the world), that the added Jalapeno to the hushpuppy mix, can only make it better! Peppers are also very good for you. You don't have to set yourself on fire, when using peppers.
Your tarter sauce is nearly identical to mine but my secret is I add a heaping tsp of horseradish. The Cajun seasoning you add provides the heat to the middle of the tongue but the horseradish gives you that little tingle on the back of the throat so your whole mouth is exploding with WOW! I like the scoring of the catfish idea and I will definitely do that next time I catch some (thx for the tip). Cheers, I look forward to your next vid.

My grandfather would eat the bullhead catfish. I'd catch them as a kid and grandma would cook them. The difference is that grandpa would pick up the bullhead and eat the meat off like corn on the cobb. I eat it that way now too. Yummy
I grew up on Iowa Bullheads! You can make small cuts on bulleads as well but the smaller ones don't need it. It helps bigger whole catfish loose that mush. Folks that have never ate a bullhead caught in the spring out of a nice clear Iowa lake have no idea what there missing!!!!! Tanks!

I know... I'm from Minnesota... If you can find whole catfish (not fillets) they don't slice em down to the bone every inch on both sides and they are mushy. I went down south and everybody cuts em.... good luck!

Hello you need to take them bottom fins off the bottom and that little tip at the Tail. I’m from Mississippi. When we cook our side to get the Dogs away from the cooking we threw them hush puppies. That how it’s got the name. Love your videos

Adding a bit of finely minced onion to the hush puppies makes them even better. I have also used finely minced celery. Probably lots of other variations.
Well my friend. Up here in Indiana near Purdue a town called treeces has done the same thing and has the best breading you've ever had to. I love Texas roadhouse filets sure. But I like it thinner and crispy. I prefer smaller fish as well so that's important as well. They strictly use channel cats and I've always wanted their recipe. Place has been there for long over 30 years and I think they also have killer breadsticks and onion rings as well as good steak I hear as well as different types of fish heck even frog legs if you want. They also make a killer long Island that will sit you on ur butt after one or two. Bring your designated driver. Be prepared or a meal you'll remember. My biggest hope is that it sticks around for my entire lifetime. Luckily I get back to Indiana half the year and it's always my first stop.
Slicing the fish like that is the traditional Talpa recipe you can get it in most of the better Mexican restaurants! I’ve cooked a variety of small fish this way blue gills, crappie and small mount just to mention a few! 😋
I never liked Domestic Catfish until I tried Swia (I think it is called) which is from somewhere in Asia, because it always tasted like deep fried MUD. Swia was almost like sweet like Perch or Blue Gill. Heard I should soak in this or that, but no one would ever settle on a single method. LOL, so cat and I aren't currently good friends.
Swai are fed chicken droppings. They raise caged chickens over the top of the fish farm so the chicken feed feeds two different animals....It is supposedly high in toxins from being fed poop and it is a law that Swai has to be disclosed and not called catfish so that people know what they are eating. Restaurants get away with just calling it “fish”, but if they call it catfish they are breaking the law. I have eaten it not knowing what it was and it tasted good, but the problem is at the microscopic level....

I will say though I have seen whole catfished cooked in central Illinois restaurants and they all did have sliced every inch on them just like in this vid
