Recipe:
Hush Puppy Recipe
1 cup self-rising flour
3 cups self-rising corn meal mix
1 cup diced green bell peppers
3/4 cup drained sweet corn
1 cup finely diced sweet onion
1 tbsp. oil (canola)
2 whole eggs
1/2 cup sugar
tsp. black pepper (maybe more)
tbsp. diced jalapeno peppers
1 cup buttermilk
Mix all ingredients together, then drop small round lumps into 360 degree oil
and fry until golden brown.
Tarter sauce recipe!
1 & 1/2 cups mayo
1 cup drained sweet relish
dash of Cajun seasoning
1 tsp. mustard
1/2 cup finely diced sweet onions
1/2 tsp. lemon juice
1/2 teaspoon of apple cider vinegar (I forgot to put it in there in the video!)

I tried the hushpuppies today and they were amazing!!! I added some baking powder and your recipe was amazing. everyone should really try this
With the self rising flour it already has baking powder and salt added at the factory. That is why it is self rising.
But if you get better results adding more baking powder .... go for it! Lol
The obvious pleasure Steve gets from demonstrating these dishes really motivates me.

I am from Illinois. I own a pond that we stock w fish. I’ve eaten lots of catfish but never cooked one or ordered one whole ever. I decided long ago that I’m gonna wait till I’m in the south before trying my first whole catfish dinner. I just want it done right and when it comes to this particular thing I feel the southerners know what they are doing

Me and Miss Sheila have something in common, that's, we both love Jalapeno peppers! I can certainly say( with all the confidence in the world), that the added Jalapeno to the hushpuppy mix, can only make it better! Peppers are also very good for you. You don't have to set yourself on fire, when using peppers.

Your tarter sauce is nearly identical to mine but my secret is I add a heaping tsp of horseradish. The Cajun seasoning you add provides the heat to the middle of the tongue but the horseradish gives you that little tingle on the back of the throat so your whole mouth is exploding with WOW! I like the scoring of the catfish idea and I will definitely do that next time I catch some (thx for the tip). Cheers, I look forward to your next vid.

WOW took a lifetime to learn where the name Hush Puppies came from! THANK YOU! Even this video is 2014 and you'll never see my comment! That's ok. Me... former Mpls/St. Paul... heck I started KS95/Twin Cities circa 1973... it's still there (FM Radio). Take care... and since you'll never see this comment... My grandfather would eat the bullhead catfish. I'd catch them as a kid and grandma would cook them. The difference is that grandpa would pick up the bullhead and eat the meat off like corn on the cobb. I eat it that way now too. Yummy
I grew up on Iowa Bullheads! You can make small cuts on bulleads as well but the smaller ones don't need it. It helps bigger whole catfish loose that mush. Folks that have never ate a bullhead caught in the spring out of a nice clear Iowa lake have no idea what there missing!!!!! Tanks!

I know... I'm from Minnesota... If you can find whole catfish (not fillets) they don't slice em down to the bone every inch on both sides and they are mushy. I went down south and everybody cuts em.... good luck!

For the tarter sauce,are you using real mayo or salad dressing,or does it make a difference?Looking forward to catchin' catfish later this week,as it's s'posed to rain next 5 days,so good'a time as any,and REALLY wanna try the recipe for hush puppies.Never homemade them before!Was also thinkin' of dijon or other brown mustard in the tarter sauce,any ideas?Thank for posting the great info!!

Hello you need to take them bottom fins off the bottom and that little tip at the Tail. I’m from Mississippi. When we cook our side to get the Dogs away from the cooking we threw them hush puppies. That how it’s got the name. Love your videos

if you are ever in Indiana go to a place called pit stop in Brownsburg they have the best whole catfish you would ever eat and they do that slicing method on their cat fish

Adding a bit of finely minced onion to the hush puppies makes them even better. I have also used finely minced celery. Probably lots of other variations.

Make your hushpuppies the night before.Put in fridge and let the "Self Rising" self rise.They will be more fluffy in the middle.

I never liked Domestic Catfish until I tried Swia (I think it is called) which is from somewhere in Asia, because it always tasted like deep fried MUD. Swia was almost like sweet like Perch or Blue Gill. Heard I should soak in this or that, but no one would ever settle on a single method. LOL, so cat and I aren't currently good friends.
Swai are fed chicken droppings. They raise caged chickens over the top of the fish farm so the chicken feed feeds two different animals....It is supposedly high in toxins from being fed poop and it is a law that Swai has to be disclosed and not called catfish so that people know what they are eating. Restaurants get away with just calling it “fish”, but if they call it catfish they are breaking the law. I have eaten it not knowing what it was and it tasted good, but the problem is at the microscopic level....
Cottonseed oil also has a higher smoke point than the others .

Slicing the fish like that is the traditional Talpa recipe you can get it in most of the better Mexican restaurants! I’ve cooked a variety of small fish this way blue gills, crappie and small mount just to mention a few! 😋
