The only way to resize the keyboard now is through the tool bar. For those of you who dont have the tool bar, go to gboard settings, go to text correction, and turn on suggestion strip. Once you have turned on the tool bar, tap the four-boxed icon on the tool bar then youll see the resize button

This is pointless, because the size of the keyboard is not the problem. The problem is the size of the individual keys on a samsung keyboard. There is a heap of empty space between each key on a samsung keyboard THAT SERVES NO PURPOSE. There should be a way to enlarge all keys at the expense of that empty space.

FOR EVERYONE who like me took ages scrolling through complete bollox from ppl. Heres what you do for Redmi 10 and probably other xiaomi phones. Open up keyboard as if your about to type. Up on left hand corner there are four small squares. Tap on that and press resize button. You're welcome.

The 'suggestion strip' mentioned in a comment above worked for me. Yeah, I agree the keyboard changing on its own is a headache.
Also, holding the emoji key is a way to get to keyboard settings.
