OK, so I literally started this game like 5 days ago, so flame me if you must, but how did you change your ui to look so modern?

I think it's an add on. There's a ton of add ons for UI, DPS, questlines etc.
I think curseforge is the primary way of going about it, try something like "Details" to measure your DPS and familiarise yourself with add ons.
