Attack them until they deflect, then deflect them until you get an opening to start attacking again. It's kind of a volley. Be aggressive. If you get good at doing that, then you've got the game down. Remember that attack windows are short, so you'll be doing a lot more deflecting. Dodging is for repositioning and retreating when your stamina meter's too high. Avoid the impulse to dodge through attacks. You're supposed to fight face to face. You'll dodge and sprint a lot in group fights to try to keep everyone's in front of you or single out archers. It's mostly for that.
