The soup looks so delicious with the sour cream and coriander on top! If you want to level it up, you could toast the pumpkin seeds first (heat them in a dry frying pan until they smell toasty) and also use roasted sweet potato. You can simply poke some holes in the sweet potatoes and put them in the oven at 200 for 1 to 1 1/2 hours. After that, turn off the oven but don't open the oven door and just leave them in there for 30 minutes. They'll come out silky soft with a sweet caramelised flavour and you can just scoop the flesh out of the skins into your soup pot.
