"Bistecca alla fiorentina" is a steak popular in Florence and all over tuscany, as Joe was saying is a porterhouse cut of a "Chianina" (kianina) breed weighting no less than 1Kg (I can eat a 1.5Kg alone easy because it is so tender)... cooking it is very simple 5 min on each side and you are good to go, use olive wood and leaves of olives and laurel to add smokiness, serve with rucula and shaved parmisan ... buon appetito
La fiorentina is not from an old cow, but its from a milk cow that does not give milk anymore. That makes the meat a bit more tasty with more flavor.

@@bofasofa9399 just like any other country in the World Brazil has his fair share of violent cities, but, in general, mostly in the interior towns like the one i live, life is pretty good, and in my opnion, is exactly in these places where you find the best, traditional food experiences.

Asians eat chicken undercooked for American Standards, they eat chicken the same way we eat steak. They must have it pink in the middle, or it is a waste. They do not need to worry about the salmonella and E coli problems that we have because of the condition of which the chickens live in Asia, is so much better than the stuffed confines of American chickens

O wow I would love to take him over the north of Montenegro to try local cheeses, dried meats and smočani kačamak, cicvara and some grannys pita, and then get him down to Skadar Lake to taste smoked and marinated carp and then end up on the sea and eat some fresh grilled squid and octopus.

@@BYSON-LEE normal steaks come from cows that are no older then 3-4 years I think. Old cow steaks are 8+ and upwards of 15 yrs old.

Carpaccio is completely uncooked also and you can make it with a ton of different steaks. There is nothing wrong with it at all.

When I was a kid in the 90's my great grandpa used to make sausages at his farm from pigs he was feeding, and I used to eat raw pork sausage mix, and it was freaking delicious. We didn't care at all about infections, parasites, didn't even cross our minds. It's still normal to eat raw minced pork in central Europe today, it's very common, so is raw beef in all kinds of forms.

Steak Tar Tar is Raw Lean Beef. You don't want to eat fatty beef or meats raw. Fatty raw beef is not good. You want the leanest cuts like Top Round Beef and you grind it up. That's steak tar tar mixed with various herbs and raw egg. I have eaten elk, antelope, deer raw and all kinds of fish and seafood raw, clams, oysters and all kinds of fish tuna, yellowtail and fish roe, salmon roe (Ikura) smelt roe (tobiko) etc.

Yup wagyu beef from japan is top notch nothing comes remotely close to it especially in the US. Side note all beef in Japan is wagyu its the grade that separates it. But still the best beef in the world

All you would need to do is get a few DNA samples for genetic diversity and then bring them back to the states and clone them.

Raw meat is really delicious and nutritious. It’s still pretty common in all parts of the world. You just have to make sure you get your meat from a decent farm.
Thats a complete lie. Cooked meat has far more usable nutrients than raw meat, and raw meat is extremely dangerous to consume. Grow up.

I had raw chicken sushi in Japan, it looked like a normal piece of sushi except instead of fish it was raw chicken. It was unbelievably delicious but my family was too scared to try it 😂 it tasted really similar to sushi kind of like tuna 🤤

It's not wagyu, it's black angus cows they are relabelling as amarican wagyu/kobe lol
It's not just a rebranding. They do change their raising process of the beef. The only problem is American cattle are generations behind the Japanese. If American farmers continue to raise cattle and select for desired types of meat, it would be possible. But not in our lifetime
@@valdimer11 are you high? American cows i’ve been selectively bred longer than Japanese cows. A majority of Japanese cows aren’t even pure Japanese they’re a mix of American European and Chinese cows. The reason being is that during the Meiji restoration they needed more animals and so the Americas Europe and China sent over cows. Defined me Japan is no different than the farming in America. Maybe the diets are slightly different for the cattle because we feed them more corn-based product. But overall there is no major difference
@@darklombax2580 but they haven't been bred for meat quality. They've been bred for quantity of meat per cow to be as cost effective as possible.

I think that Joe is intimidated. Sonny seems so gentle and kind, but he doesn’t back down and challenges Joe on all his misconceptions. I think Joe has also paid tons of money for expensive meals all over the world and thinks he knows something.

For some reason I absolutely love raw salmon, but for years it always grossed me out. Now it's really all I eat, along with well done steaks. Yes I know people have a problem with well done, but tbh, it just seems like the people who like it red in the middle are just wannabe cannibals who are too cowardly too go kill and eat an animal completely raw.

I don't think I would get sick personally. My family hates beef fat with a passion. they cut off every possible piece before eating and give it to me. For some reason I love it.
I leave all of the fat on when I make a roast. When it's a huge chunks of fat and just put them on bread and eat it like that.
Fat aversion seems to be an American thing. My mom was a farmer and she makes/eats terrible well-done steak. The Chinese side of the family ALWAYS wants fat and cartilage to chew on when they eat.
